食用盐100克、花椒20克、八角4颗碾碎、香叶4片撕碎、小茴香5克,混合均匀。取无油无水的干净炒锅,混合好的腌料倒入锅中,小火慢慢焙炒,直到盐粒微微发黄,散发出浓郁的香味。鸭子内外彻底清洗干净,炒好的椒盐均匀地、仔细地涂抹在鸭子全身,每一个角落都要抹到。用手反复揉搓按摩,帮助入味。鸭子放入保鲜袋,密封好,放入冰箱冷藏腌制48小时。

取出干腌好的鸭子,用少量清水冲掉表面多余的香料碎。在一个足够大的锅中,加入足量清水,加入盐80-100克、葱段50克、姜片30克、料酒30毫升。卤水烧开后,转小火煮10分钟,关火,等卤水完全冷却。卤水倒入一个大盆,把鸭子完全浸泡在卤水中。用一个重物压住,确保鸭身完全被卤水淹没。盖上盖子,继续放入冰箱冷藏进行湿腌,时间12-24小时。

第三步:

从卤水中捞出鸭子,用清水稍微冲洗一下表面。用S形挂钩钩住鸭子的颈部,悬挂在阴凉通风处晾干。直到鸭皮表面干燥,摸上去有些发紧,但又不是完全风干的状态。如果没有悬挂条件,也可以将鸭子放在烤网上,放入冰箱冷藏风干。

第四步:

取一个深锅,放入足够淹没鸭子的清水。加入八角2颗,桂皮一小段,香叶2片,白芷2片,葱结1个,姜片几片。大火烧开后转小火,煮10-15分钟,让香料味充分释放到水中。鸭子轻轻放入锅中,将火力调到最小,保持水面微微冒小泡,炖40-50分钟。用勺子撇去浮沫,鸭子煮熟后,关火。不要立即捞出,让鸭子在原汤中浸泡自然冷却,浸泡至完全冷却。鸭子沥干汤汁,斩件装盘。
