买一块好的牛排,一定要选择有油花的,吃起来才香。超市里的冷冻牛排尽量不要买,口感太差。牛排提前从冰箱拿出来回温,用厨房纸巾把表面水分擦干净。
准备一个碗,打入两个鸡蛋,加入少许盐、胡椒粉和橄榄油,搅拌均匀备用。平底锅加热后放橄榄油,油热后倒入鸡蛋液,小火慢慢煎至定型,翻个面再煎一会,盛出来备用。
再次起锅烧油,放入牛排,大火煎制两面金黄,表面泛着诱人的油脂光泽,撒上黑胡椒碎,淋入红酒汁,盖上锅盖焖一会,让牛排充分吸收汤汁的味道,再撒点盐调味,就可以出锅了。
