准备食材:新鲜的黄蚬子一斤、小土豆两个、胡萝卜半根、尖椒一个、洋葱半个。调料有蚝油、生抽、老抽、白糖、鸡精、料酒以及蒜片、辣椒段。
先把小土豆洗干净,去皮切块,然后把胡萝卜切成滚刀块,青红椒切条,洋葱切丝备用。
炒锅烧热倒油,下入蒜片和辣椒段爆香,接着倒入土豆块,中火翻炒至表面微焦,再放入胡萝卜继续翻炒均匀。
接下来加入一勺料酒,两勺生抽,三勺蚝油,四滴老抽上色,最后加入适量清水没过食材,盖上锅盖焖煮 3 分钟。

水开后撇去浮沫,加入一点白糖提鲜,再撒些胡椒粉去腥增香。转小火慢炖 10 分钟左右,让土豆软烂入味。
这时候咱们再来处理一下蚬子肉,先在清水中多洗几遍,去除泥沙等杂质,沥干水分装盘备用。
时间差不多了,把调好的料汁淋入锅内,大火收汁,待汤汁浓稠即可出锅。
接着我们就可以开始制作干锅黄蚬子啦!锅里放少许油,放入洋葱丝,小火慢慢煸炒至出香味,表面微微发黄时,加入提前焯好水的小土豆,快速翻炒均匀,盛出备用。
另起锅烧油,下入辣椒段、蒜片和姜片炒香,接着倒入黄蚬子,大火快速翻炒几下,淋入调好的料汁,快速翻匀,使每只蚬子都裹满酱汁,再倒入之前炒好的土豆丝,快速翻匀就可以出锅了。
