食材清单:
主料:猪里脊肉
配菜:黄豆芽、上海青或者其他爱吃的
灵魂调料:郫县豆瓣酱、干辣椒段、花椒粒、大蒜、生姜、小葱
腌肉料:料酒、生抽、淀粉、蛋清
其他调料:食用油、盐、白糖、鸡精、辣椒粉、花椒粉
制作步骤:
1.取一块猪里脊肉,先横着纹路切成大约0.3厘米厚的薄片。切好后放入碗中,加入一勺料酒、一勺生抽、一个蛋清、一小撮盐,用手抓拌均匀,让肉片充分吸收调料。然后加入一大勺淀粉,继续抓匀,直到每片肉都裹上薄薄的浆。最后,淋上少许食用油拌匀,腌制15-20分钟。
2.黄豆芽和上海青清洗干净,上海青可以对半切开。烧一锅开水,水中加少许盐和几滴油,先下黄豆芽焯烫1分钟,再下上海青焯烫30秒至断生。捞出沥干水分,铺在准备盛菜的大碗底部。
3.锅中倒入食用油,油热后转小火,放入郫县豆瓣酱,慢慢炒出红油和香味。接着,加入姜末、一半蒜末、干辣椒段、一小撮花椒粒,继续煸炒,直到香味四溢。
4.往锅中加入足量的开水,水量要能没过之后的肉片。大火烧开后,根据口味加入少许盐、一小勺白糖提鲜,也可以加一点鸡精。汤汁煮沸后,用漏勺捞出锅里的辣椒段和花椒粒等料渣。
5.肉片一片一片地下入滚开的汤中,用筷子轻轻拨散,防止粘连。千万不要一股脑倒进去! 等肉片全部下锅后,煮大约1-2分钟,看到肉片变色、浮起,基本就熟了。
6.煮好的肉片连同汤汁一起,小心地倒入铺好蔬菜的大碗中。在肉片表面均匀撒上预留的另一半蒜末、一大勺辣椒粉、一小撮花椒粉、一把葱花。
7.锅洗净,烧热,倒入约50毫升的食用油,烧至油冒青烟。然后,将滚烫的热油均匀地淋在之前撒好的蒜末、辣椒粉等料头上。“滋啦”一声,香气瞬间被激发出来。
