起锅倒入适量食用油,油热之后把姜蒜末放进去爆香,然后再把猪蹄倒进来翻炒均匀,让每一块猪蹄都裹满油花。接着往里面加入两大勺豆瓣酱,快速翻炒出红油。
这时就可以把所有菌子倒进去了,转中小火慢慢炖煮个 10 分钟左右,让食材充分吸收猪蹄的油脂,也更入味。时间到了之后,再加入没过食材的热水,盖上锅盖焖煮 20 分钟。
最后放入自己喜欢吃的蔬菜,加少许食盐调味,再煮个两三分钟就可以了。出锅前撒上葱花点缀一下,一碗香喷喷的猪脚火锅就做好了,看着就有食欲。
