第一种：凉拌苦瓜

这是夏天最受欢迎的凉拌小菜，无需长时间翻炒，省时省力，做好之后色泽鲜亮，口感爽脆劲道，香辣开胃，妥妥的夏日下饭神器。

挑选新鲜翠绿的苦瓜，仔细清洗干净表面纹路，将苦瓜从中间对半切开，用勺子把里面的籽和厚厚的白瓤全部挖除干净，白瓤是苦瓜苦涩的主要来源，清理干净能大幅减轻苦味。处理完毕后，切成宽度0.5厘米左右的薄片，切得均匀整齐，口感会更加出众。

锅里倒入适量清水大火烧开，水沸之后下入切好的苦瓜片进行焯烫，微微断生立刻捞出，不要煮太久，避免苦瓜变软失去脆感。捞出迅速放进凉白开里过凉，锁住清脆口感，沥干水分装入干净大碗中。

依次放入切好的蒜末、切碎的红甜椒增香配色，再加入适量辣椒油、醇香陈醋、味极鲜酱油，撒上少许食盐提味，最后放上一把新鲜葱花。顺着一个方向充分抓拌均匀，让每一片苦瓜都均匀裹满料汁，静置两分钟入味，直接装盘就能上桌。入口脆嫩爽口，酸辣交织，清爽解腻，天热没胃口吃上一盘，瞬间食欲大开。

第二种：苦瓜酿肉

荤素搭配的经典家常菜，颜值高味道绝，苦瓜自带清香，肉馅鲜嫩多汁，中和了苦瓜的微苦，鲜香醇厚不油腻，端上桌就是一道硬菜。

依旧先处理苦瓜，洗净对半切开去除瓜籽白瓤，切成大小均等的苦瓜段。准备新鲜猪肉馅，加入姜末、生抽、少许食盐、蚝油以及淀粉，顺着一个方向搅拌至上劲，腌制十分钟充分入味。

第三种：苦瓜炒鸡蛋

最简单朴素的家常小炒，食材普通做法简易，却是百吃不厌的味道，清淡鲜香，低脂健康，日常家常做饭首选。

苦瓜清洗处理干净，去瓤切片备用，碗中打入三四个鸡蛋，加一点点食盐搅打均匀。热锅倒入食用油，油热之后倒入蛋液，待蛋液底部定型，快速翻炒成大块鸡蛋花，盛出来放置一旁待用。

锅底留少许底油，放入苦瓜片大火快速翻炒，翻炒至苦瓜微微变软，保留一点点脆感口感最佳。接着倒入提前炒好的鸡蛋，混合在一起翻炒片刻，加入少许食盐简单调味，无需过多复杂调料。

快速翻拌均匀便可出锅装盘，黄绿相间色泽诱人，鸡蛋软嫩鲜香，苦瓜清淡微甘，口味清淡不厚重，不油不腻，简简单单却格外下饭，清淡养人，夏日吃着毫无负担。
