1.准备食材，苦瓜小的两根，大的一根即可，新鲜土鸡蛋三四个，大蒜头四瓣，小葱两根！

2.首先我们来处理苦瓜，清洗干净之后对半切开，掏去瓜瓤，然后切成片，放入碗中加适量白糖腌制几分钟，有的人加的是盐，其实那样做是不对的，盐会让苦瓜变软，失去口感，然而白糖就不会，同时还能中和苦瓜的苦味，这就是很多人为什么炒不好苦瓜的原因！

3.大蒜头剁细，小葱也切成葱花备用，土鸡蛋打入碗中充分搅散！

4.开始制作，首先起锅烧水，水中加适量盐和食用油，这是蔬菜焯水通用的技巧，它可以使蔬菜保持脆绿不变色的关键，水开倒入苦瓜焯水半分钟左右即可捞出控水，这样可以很有效的去掉苦瓜里面所含的草酸成分，这些都是干货技巧，你们记住了吗？

5.再次起锅烧油，油热以后倒入鸡蛋炒至定型，然后捞出备用！
