夏天一到就没胃口、还总觉得身体发虚的人，真该去看看上海松江张泽这口伏羊。伏天里，叶榭镇张泽片区的土灶一开，木桶一支，老汤一滚，羊肉的香气就能把人勾住。很多人平时一听羊肉就皱眉，觉得那是冬天的主角，可张泽偏把这件事做成了夏天的日常，这里面不是热闹，是七百多年攒下来的门道。
张泽伏羊的底子，先得从元代说起。那时蒙古驻军把草原上的坑焖羊肉带到松江，后来又跟本地的黄酒、酱油、香料慢慢合拍，才有了今天这口木桶羊肉。它不是凭空冒出来的网红吃法，而是一路从北到南、从粗犷到细腻，硬生生磨成了江南人也愿意端起碗的味道。这个过程很像咱山东人做饭，光有热情不行，还得看火候、看底子、看老辈子传下来的经验。
张泽伏羊最抓人的地方，不是一个香字能说完的。羊骨、草药、香料一锅锅慢慢吊着，老汤每天续，不能断底。老汤这东西，真不是摆样子的，里面靠的是时间、手艺和耐心。很多老食客都知道，汤底一断，味儿就散了；汤底不断，哪怕换一锅羊肉，骨子里的鲜味还在。2023年，华东理工大学还专门做过成分分析，发现老汤里确实有益生菌和氨基酸。这说明老辈人讲的那套，不是拍脑袋，是有科学能对上的。
木桶也不是随便找个桶糊弄。香樟木本身带木香，炖的时候，羊肉的膻气会被压下去，肉香反而更顺。很多人吃羊肉吃怕了，不是羊肉不好，是处理不到位。火大了，肉柴；料重了，味冲；汤寡了，腥气顶鼻子。张泽这口伏羊能立住，靠的就是把这些活儿做细了。土灶慢炖，看着笨，实则稳当，跟老山东人炖大锅菜一个理儿，急不得。
说白了，伏天吃羊，在张泽不是临时赶时髦。当地人真就是这么过日子的。入伏以后，天气闷，人容易乏，饭量也容易往下掉，这时候来点热乎但不冲的东西，胃口一下就能打开。羊肉性温，古书里早就有记载，民间也一直有三伏天补一补的说法。张泽人吃伏羊，不是为了显摆讲究，而是把老经验变成了日常安排。早上忙活一天，晚上坐下来喝口汤，整个人都踏实。
这口伏羊能红这么久，还有一个原因，就是它没把自己供起来。很多非遗一旦进了展柜，就只剩介绍牌了，游客看完拍个照就走，嘴上说敬佩，肚子里还是空的。张泽不是这样，它一直在卖，一直在做，一直在端给人吃。老百姓愿意掏钱、愿意排队，说明这口味真站得住。非遗最怕的不是没人夸，最怕的是离生活太远，远到只剩文章里能看见。张泽伏羊偏偏是活在锅里、活在街上、活在一口一口的吃法里。
先说烂糊羊肉。这道菜看着朴素，最考验火候。肉炖得发软，筷子一夹就散，汤汁裹着肉香往外冒，热天里吃也不腻。很多人以为夏天只能吃凉的，实际上，胃口差的人，来点软烂热汤，反而更舒服。老话讲，吃饭得顺着脾胃来，不是光图凉快。张泽这口烂糊羊肉，吃的就是这个稳劲儿。
白切羊肉更讲究刀工和原味。白切这路子，本来就怕肉不够鲜，稍有点膻味就露馅。张泽这边配姜末和薄荷，姜末去腻，薄荷提口气，入口先是肉香，后面带点清凉，口味层次很明白。外地人第一次吃，常常会愣一下，觉得羊肉怎么还能这么轻快。其实这就是江南做法的巧处，不硬顶，不猛冲，像拉家常一样把味道铺开。

还有羊血汤配叶榭软糕，这搭配就很有地方味了。羊血汤热乎鲜亮，叶榭软糕糯中带点韧，单看名字，外地人可能先犯嘀咕，真端上来一尝，立刻就懂了。老江南的吃法，常常不靠大油大盐，而靠彼此搭配得巧。软糕吸汤，汤里带鲜，这种感觉不张扬，但很耐吃。越是这种不起眼的搭配，越说明地方饮食不是瞎拼，而是多年吃出来的结果。

还有人爱问，非遗到底值不值守。要我说，值不值，先看老百姓认不认。老百姓嘴最实在，哪家好吃就往哪家跑，哪家糊弄就不去了。张泽伏羊能从元代一路传下来，靠的不是宣传词写得漂亮，而是确实有一口稳当味道。它把历史、手艺、日常揉在一起，吃一顿不是为了摆拍，是为了真能填肚子、真能暖心。
叶榭镇张泽片区这一锅锅伏羊，表面上看是吃肉，实际上吃的是规矩、耐心和地方性子。慢炖的火候，续着的老汤，香樟木桶的木香，再加上白切、烂糊、锅贴、羊血汤这些搭配，张泽人把一口羊肉做得不急不躁，也不花里胡哨。这样的吃法，才像老百姓过日子，踏实，敞亮，肚里有货。
