香菜虾皮酱丨只需一勺就能唤醒丨整个夏天的胃口|小米辣|热油|白粥|米饭|美味菜肴|香菜虾皮酱|香葱

晚饭桌上总有一碟凉菜，孩子都先伸筷子，偏偏它不是大鱼大肉，却比主菜先见底。记得夏天的风一吹进厨房，我妈就端上来那一小碗酱，香菜虾皮拌出来的，热油一泼下去，厨房立刻起了味。虾皮一瞬间变酥，“滋啦”声像在提醒人先吃饭，别先光顾着说话。后来我自己一个人过日子才明白，真正让人踏实的，不是多贵的食材，而是冰箱里那罐随手舀一勺就能救场的香菜虾皮酱。

我现在和70多岁的父母住一块，两口孩子十来岁，正是能吃也最挑嘴的时候。我这人是山东男人，饭桌讲究一个实在：你把底气给足了，菜就不愁没人吃。香菜虾皮酱这种东西就很对路，拌白粥能把寡淡的粥底拉回味道里，夹馒头能不知不觉一整个下肚，拌面能连汤带面吃得干干净净。懒得开火的时候舀一勺，直接把一餐饭从发愁变成踏实，最要紧的是家里老人小孩都能吃得顺口。

很多人做酱就喜欢复杂，锅里炒一圈、调一堆，最后味道不一定更好。可香菜虾皮酱这事，关键就几个动作，做成以后味道很稳。把香菜和香葱洗净切得细碎，越碎越好，碎到拌进米饭、白粥时能均匀铺开，咬下去才不会有大块尴尬。小米辣切圈，不吃辣就少放一点，但这一丝微辣是点睛用的，味道不炸不冲，却能提神开胃，让人不自觉把筷子往下夹。

虾皮这一步也挺讲究，别提前下锅煸炒。干虾皮直接和香料放进碗里，热油一泼，虾皮遇高温就迅速变脆，焦香也跟着出来。提前干炒反而容易焦糊，焦了就苦，鲜味会跑。黄豆酱用一勺就够，搅拌均匀以后咸鲜味能往外铺开，而且它本身带咸度，按这个配比走一般不用额外加盐。你要是盐又加进去，香气就容易被盖住，吃起来反而觉得齁。www.blog.fzyjwl.top/ArTicle/details/26387033.shtml

这里面有个最容易被忽略的门槛：热油的温度得够。油温偏低，泼下去没有那一下“滋啦”的响声，香料的香气也激发不起来。油温到微微冒烟的程度再浇，虾皮脆起来也更快，香菜和香葱的清香会在热油里被充分带出来。那一瞬间你就能闻到不一样的味道，像是把一碗家常饭从阴天拽回晴天，厨房都活了。做过一次你就记住了，油温这事不是玄学，是体验感。
