食材：蟹味菇、塔菜

调料：油、盐、蒜、料酒、白糖

制作方法：

1、将塔菜一片一片地摘下来清洗干净，蟹味菇去除根蒂清洗干净；

2、坐锅烧水，水开后加入少许盐和油，放入蟹味菇焯一下水，快速捞出冲凉并控干水分，再放入塔菜焯水，水开后捞出冲凉并控干水分；

3、将塔菜对切成两段，另将蒜切片；

4、炒锅加热，倒入少许油，放入蒜片炒香，加入蟹味菇翻炒，翻炒时淋入少许料酒；

5、酒气挥发后，加入塔菜，调入少许盐和白糖，一起翻炒均匀即可。

小提示：

1、蟹味菇焯水时间要短，放入加了油和盐的沸水中，烫一下即可捞出，烫久了影响口感，营养成分也会流失；

2、塔菜略带一些苦味，焯水后可改善其口感；

3、炒菌菇类的菜，无需添加味精或鸡精，因为菌菇本身就很鲜。
