才知道，安徽美食原来这么炸！尤其是这10样，吊打其它菜系，真的

徽州人做菜跟活着一样，把苦日子腌一腌，发酵了反倒成香。

臭鳜鱼最早是徽商出门带的鱼，天热盐腌发了臭，舍不得扔，烧出来臭中带香。

徽菜重油重色重火功，是山里湿寒，油重扛饿，火功足才入味。

毛豆腐长白毛，外乡人怕，徽州人知道是时间给的礼，煎黄蘸辣酱，是苦日子的念想。

过年杀猪腌后腿，灶头熏成刀板香，切薄片蒸木板，油渗板纹，香得厚道。红白喜事八大碗，头碗必定是肉，再穷也撑脸面。

安徽地跨江淮，吃法两重天。

淮北多麦，皖北面食顶饱，淮南牛肉汤汤浓肉烂配烧饼。沿江鱼米，蒸鲥鱼腌刀鱼是水边鲜。

皖南山区把问政山笋做出名，人说甲天下，是山神恩赐。

这些吃食，都是人跟日子过招留下的路。

徽商走半个中国，带回盐茶见识，也带回一桌菜。

菜里有山的硬，水的软，离乡人的念想。

菜不会说话，可比史书更记得老百姓怎么活。

今天跟诸位聊聊，安徽最好吃的十样美食，吊打其他菜系！

说起这鸡，得从两千多年前讲起。

汉代楚王刘戊墓里挖出陶盆，泥封上盖着"符离丞印"，里头鸡骨架还在呢！

这就是符离贡鸡的铁证，比啥传说都硬。

传说更远，彭祖篯铿给尧帝献雉羹，符离这片水乡泽国就开始养野鸡，后来驯化成符离麻鸡，根子就扎在这了。

到1910年，山东管再洲带来德州扒鸡手艺，1915年江苏魏广明也来凑热闹，再到韩景玉集大成，1956年直接上了《中国名菜谱》，跟德州扒鸡、道口烧鸡、沟帮子熏鸡并称"中国四大名鸡"。

当年津浦铁路一通，绿皮车停符离集站，小贩上车一吆喝，那香味儿就飘遍全国了。

做法讲究嘞！

十五道工序、十八味香料，先把鸡砸骨造型——"九龙八卦，填腿入腹"，整成个"睡美人"。

饴糖抹身，180℃热油炸到金黄，再扔进百年老汤文火慢炖。

出锅那鸡，色泽金亮，一抖腿肉就脱骨，肥而不腻，嚼骨还有余香。

当地人不用刀切，上手撕，"撕着吃才带劲"——这味儿，两个字：真中！

吴山贡鹅，又叫行密贡鹅，发源于唐朝乾符年间，距今一千多年了。

当年五代十国，庐州人杨行密南征北战，占了淮河以南三十多州地盘，天复二年被封吴王。

他穷出身，不敢忘本，乡亲拿大白鹅配佐料卤好进贡，吴王吃美了，说"以此卤鹅进餐，堪称贡品"。

他死后葬吴山，墓堆如山，地就叫吴山，鹅也跟着沾光。

卤方是吴王御厨史氏后代传的，后来冯氏接了手艺，这方子比好多朝代都长。

据《长丰县志》记着呢，实打实的事。

选鹅讲究，散养八个月到一年、十三四斤的皖西大白鹅。

卤水用二十多味中药加猪大骨老母鸡熬底汤，小火煨十二小时往上。老鹅卤五六个钟头，仔鹅两三个钟头，竹篦子压着防破皮。

出锅表皮酱红油亮，肉酥烂脱骨，咸鲜带甜，中草药香气打鼻子，不腻。

当地人讲："鹅吃草不生病，贡鹅下酒赛神仙"，冷切热蒸都得劲。

这手艺2022年入了安徽省第六批省级非遗，不是白给的。

徽州毛豆腐，老底子叫霉豆腐，打元代至正十七年（1357年）就有了，距今快700年。

传说那时候朱元璋兵败逃到休宁，肚子饿得慌，随从在草垛里翻出几块长毛的豆腐，架火上一烤，嘿，香得不得了！

后来他打了胜仗，专门让厨子做这道菜犒赏三军。

还有个说法，他小时候给财主做苦工，长工们把豆腐藏草垛里，几天后长了白毛，他煎着吃了一嘴鲜，从此忘不掉。

这东西就这么在徽州扎了根，《舌尖上的中国》都拍过。

做法也不复杂，精选黄豆磨浆点卤，切块搁竹条上，15℃到25℃放个三五天，等白毛裹满、黑孢子冒头就成了。

油锅里一煎，两面金黄起虎皮纹，再拿酱油、糖、葱姜烩烧。

成菜外酥里嫩、咸鲜微辣，咬一口豆香直窜鼻子。

当地人讲："徽州第一怪，豆腐长毛上等菜"，这话不假，一口下去，全是光阴的味道。

清光绪二十二年（1896年），合肥那位晚清朝堂响当当的人物奉旨出使欧美，

绕道俄国参加沙皇尼古拉二世加冕典礼。

一路吃了俩月洋餐，胃都倒了，到了美国赶紧让使馆厨师摆徽菜宴席。

客人吃了几个钟头不肯下桌，菜却光了，厨师急得冒烟，把剩下的海参、鱼肚、鱿鱼、鸡块一股脑儿烩进锅里。客人叫好问名儿，他操着合肥口音说"杂碎"，

旁人听岔了，成了"杂烩"。

后来文化人张伯驹嫌"杂碎"北方话里骂人，改叫"杂烩"，这名儿就定了。

说白了，一句方言闹出百年名菜，这事搁谁身上不觉得荒唐又传奇？距今整整130年了。

做法讲究"前期工作"——鸡杂、肚片、火腿、香菇、山笋垫底，麻油酥烧，陶盆文火慢煨。

新式做法用水发鱼翅、海参、鱿鱼、油发鱼肚、干贝、熟鸡、猪肚、火腿、鸽蛋十几样料，鸡汤烧烩。

成菜咸鲜可口，醇香不腻，海参Q弹，鸡丝嫩滑，火腿咸香一层层散开。

合肥老话讲"好吃多吃"，这菜就是这个理儿——啥都往一锅扔，扔出来反倒成了经典。

1988年《中国名菜谱·安徽卷》头回收录，2018年入选"安徽十大经典名菜"。

徽州刀板香，这名字一听就带劲。

说起它的来历，得回到明朝，抗倭名臣、兵部尚书胡宗宪返绩溪龙川，路过歙县问政山拜访恩师。

师母把腌猪肉铺在山笋上，搁刀板一块蒸，切片上桌，胡宗宪吃得胃口大开，说"这刀板咋这么香"，便落下这名。

算起来，五百多年了。

古徽州山高田少，腊月杀年猪腌肉，是活命的本事，也是待客的脸面。

一个"腌"字，藏着多少代人的炊烟和耐心哦。

做法不复杂，讲究的是功夫。

选本地黑猪或蓝田花猪的五花肉，抹盐腌四十天，春节前后暴晒，柳叶发芽时移回屋内穿堂风再吹五十来天。

吃时洗净整块煮至七成熟，趁热切薄片码木板上蒸五到六分钟。

关键是底下垫问政山春笋吸油，木板吸走油腻，形成腊肉香、笋香、木香"三香合一"。

肉红白分明，肥的透亮入口即化，瘦的紧实越嚼越咸香，肥而不腻嘛！

徽州老话讲"盐是骨头，时间是肉"，

这道菜，吃的不光是味儿，是那段翻不回去的旧时光哎。

得往回倒好几百年。

相传明代石台县"四部尚书"毕锵家里，一品诰命夫人余氏亲手烧了锅菜，碰巧乾隆皇帝微服出巡饿得慌，吃了直夸好，封了个"一品锅"的名。

到了民国，绩溪走出个大人物胡适，北大校长，留洋回来待客必上这锅。

他弟子梁实秋吃过写文章："口径二三尺的大铁锅，一层鸡一层鸭一层肉一层油豆腐，紧底下萝卜青菜，味道好极。"

这锅菜，愣是跟着人名传遍了天下。

做法讲究着嘞。

铁锅底铺干笋、萝卜、干豆角打底，叫"垫锅"；

上头码红烧肉、油豆腐包、鸭蛋饺，层层叠上去，加高汤柴火慢煨两三个小时。

吃有规矩——先吃上头的，莫拿筷子往底下捣！

成菜油而不腻、烂而不化，荤素滋味全渗一块了。

绩溪老话讲"吃一品锅，越吃越热乎"，冬天围着铁锅，热气蒸脸，那才叫日子。

如今是安徽省级非物质文化遗产，九层塔似的往上摞，一锅装的不是菜，是徽州人的脸面和团圆。

说起徽州腌笃鲜，老底子徽州人讲"腌"是咸肉，"鲜"是鲜肉加春笋，"笃"就是小火慢慢炖。

这名字咋来的？得从晚清说起。

胡雪岩，徽州绩溪人，家大业大。

朝廷要筹粮饷，左宗棠找上门。

雪岩拿家乡腌炖鲜招待，把腊肉换成火腿，塞进老家问政山春笋。

左宗棠吃美了，因湖南口音把"腌炖鲜"喊成了"腌笃鲜"，这名儿就这么传开了。

问政山笋早在南宋就被选为贡笋，《徽州通鉴》白纸黑字写着"笋出徽州六邑，以问政山者味尤佳"。

徽商走南闯北，行囊里塞咸肉火腿，到了春天用笋一炖，那叫一个"鲜掉眉毛"。

做法不复杂但讲究火工。

咸肉温水泡2小时去盐，鲜肉焯水撇沫，笋片滚刀切。砂锅放水，大火滚开转小火"笃"1小时，不盖盖子，汤清而鲜。

肉要酥肥，笋要半透明，汤色乳白不浑。

哇塞，汤白汁浓，肉质酥润，笋清香脆嫩，咸鲜合一，啥调料都不用多搁。

本地人讲："好笋好肉，文火慢慢磨，急不得嘞！"

2022年这道菜入选安徽省"特色美食200道"，算徽州春天的魂了。

说起臭鳜鱼，得从200多年前讲起。那时候古徽州八山一水一分田，不产鳜鱼，好鱼全在长江边的贵池、铜陵、大通一带。鱼贩挑担子翻山，

走七八天才到徽州。天热鱼要坏，咋办？码一层鱼洒一层淡盐水，天天翻。

结果鱼到了，鳃还红着，鳞没脱，就是表皮有股子怪味。

舍不得扔啊，洗干净热油一煎，重料红烧——嘿，鲜得掉眉毛！

老辈人讲"腌鲜鱼"，徽州话里腌鲜就是臭香的意思。

还有一说，明朝宣德年间有个叫张翁的，登山捕了条鳜鱼搁背包里几天，回家臭了，一尝反而更鲜。

你说巧不巧？

这道菜2008年入选国家级非物质文化遗产，登过《舌尖上的中国》。

做法说穿了就一个字——腌。鲜鱼去鳞去脏，木桶里撒盐码鱼，压重石，

10到20℃腌7天左右，闻到味了就成。

红烧最经典：

鱼煎两面金黄，下五花肉丁、笋丁、香菇，酱油老抽料酒一通烧，大火收汁撒葱花。

出锅鱼肉蒜瓣状，一戳就散，骨刺分离。

夹一块进嘴，先是咸鲜，再是酱香，后味还带点回甘。

说起无为板鸭，得从清朝道光年间算起，200多年了。

相传清乾隆三十九年，无为鼓楼口有个孤儿叫张忍，手艺好，人穷，拿一只板鸭去何家求婚被撵出来。

回家闷闷不乐，随手把鸭挂灶上，添了把木屑，烟熏半宿，鸭变得金黄，香得不行。

何母见了改口："这鸭就是聘礼！"

后来张忍夫妇把板鸭叫熏鸭，当定情信物，传成了"超节"风俗。

再往前说，朱元璋放牛时偷烤野鸭，也算根上的缘分。

光绪年间，五十多户回民从新疆迁来，带了清真卤味手艺，跟本地巢湖麻鸭一撞，熏卤合一，味儿就正了。

2013年入选安徽省第四批省级非遗，同年拿下国家地理标志产品。

做法就一个字：讲究。

先熏后卤是核心——宰杀去内脏，盐腌硝水搓，挂风口晾干，再用果木或杉木屑慢熏，每五分钟翻一次，熏到皮黄肉红，丢进八角、花椒、丁香等30多种香料老卤里，小火炖十分钟，柴灰焖三十分钟。

成品金黄油亮，皮脂厚润，肉质鲜嫩，北京烤鸭的焦香加南京板鸭的软嫩，全占了。

说起安徽祁门的中和汤，得从南宋说起。

方岳，字巨山，号秋崖，祁门荷嘉坞人，1199—1262年间的诗人，官到吏部侍郎。

他在鄱阳当官时，衙署紧挨着鄱阳湖，湖有三条河汇入，其中一条叫中河，正是从祁门流出来的。想家了，就去泛舟。

船上煮豆腐缺料，捞把河里小虾扔进去，一尝——鲜！带回祁门，一传十十传百，成了宴席头菜。

因"河""和"同音，文儒取中庸和谐之意，改叫中和汤。算下来，700多年了。

民国祁门最大酒楼就叫中和楼，2022年列入安徽省第六批省级非遗。

做法不复杂，却讲究。

老豆腐切米粒丁，焯水去腥；冬笋、香菇、瘦肉切小丁，配河虾米；

猪油打底大火煮开，文火慢炖。千万别搁酱油！要那乳白色汤底，才瞧得见白豆腐丁、粉火腿丁、黑香菇丁、绿葱花。

口感呢，鲜而不腻，稀稠刚好，喝一口，笋甜菇香豆腐嫩，啥味道都往嗓子眼里钻。

祁门人讲："头碗汤上桌，满桌才开席嘞！"

说到底，安徽人把日子过成了菜。

臭鳜鱼是舍不得，毛豆腐是等得起，刀板香是熬得住。

苦日子腌一腌，发酵了反倒香。菜不会说话，可你咬一口，山里的硬、水里的软、离乡人的念想，全在里头。

人跟日子过招，没那么多道理，就一句话：饭得吃，路得走。
