湖南湿气重，辣椒明末才来，却成了命。

湘西杀年猪，肉用松柏枝熏得黑亮，挂梁上能存半年。

沅水放排的汉子怀里揣块腊肉，落水啃一口，身子就热了。

这是活命的手艺。

湘菜里辣椒炒肉，藏着“江西填湖广”的移民史。

洞庭渔民一条鱼做七十二样。

曾国藩练湘军，伙夫用猪血豆腐捏丸子，叫“血性豆腐”，兵卒吃了敢打硬仗。

吃食不精致，却养出一方人耐得烦、霸得蛮的脾性。

长沙夜宵摊口味虾翻滚，百年前码头脚夫也这么蹲江边吃光头粉。

火宫殿臭豆腐，光绪年间姜二爹的摊子，卤水泡三天，外焦里嫩，闻着臭吃着香，像湖南人刀子嘴豆腐心。

新晃牛肉干

话说新晃这地儿，古称晃州，在湘西雪峰山余脉深处窝着。

宋代淳化年间，晃州刺史田汉权往京城进贡丹砂、白蜡、牛脯，宋太宗赵光义尝了晃州干牛肉直夸味美，亲自召见还赐了器币。

你想啊，一千多年前的皇帝都惦记这口，这牛肉得多横！

《晃州厅志·风俗》记载："晃州黄牛肉尤多焉。"

《沅州府志》也说龙溪口市"贩豆、晃州黄牛肉尤多"。

一句话传了上千年，传成了国家地理标志产品，2009年12月28日原国家质检总局正式批准保护。

当地侗族人说："鸭保寨，牛肉、豆腐当小菜"，日子就靠这头牛撑着，三月三、六月六还要给牛过生日，嘿，敬牛敬得跟敬祖宗似的。

做法也讲究，

取湘西黄牛后腿精肉，剔骨去筋切薄片，精盐、花椒、白酒腌透，

柴火慢烘或古法控温真空锁鲜，无防腐。

出来色泽淡红偏褐，撕开肉纹清晰，嚼着韧而不柴，麻辣里带回甘，越嚼越香。

靖州雕花蜜饯

到湖南必吃的10种特色零食，靖州雕花蜜饯得单拎出来说。

这东西有年头了，史料上说法不一，一说起源于东周时期，距今2600多年；

一说发展于五代末年，也有一千多年。当年五代"飞山蛮"首领潘金盛起兵被吕周所杀，峒民遭难，后来杨再思率余部安定靖地，百姓感激，把青柚切块煮漂腌蜜犒赏官兵。

打那起，一刀一刀刻下来，从民间贡品刻成了国家级非遗，2021年入的第五批名录。

做法很讲究。

未成熟青柚切片，拿柳叶尖刀雕龙凤、花鸟，啥"喜鹊闹梅""孔雀开屏"都有。

经选材、刮皮、切片、过水、雕刻、浸泡、煮沸保青、漂洗、腌酿、晾晒十多道工序，一斤蜜饯九两糖。

咬嘴里"咯嘣咯嘣"脆响，甜得板扎；

开水冲泡三四分钟，茶水甘甜，润肺生津。

靖州老人讲："这个甜咧，甜到心窝子里去咯！"

说白了，苗侗妇女手里那把柳叶刀，刻的不光是花，是日子。这玩意儿既能吃又能看，当真一绝。

凤凰姜糖

说到湖南必吃的特色零食，凤凰姜糖排前头，没得争。

这东西起源于清乾隆年间，由镇竿贾氏和刘氏家族创制，传了两百多年。

话说凤凰人吃五谷、操劳一年，偶感风寒不求医，自己切几片姜拌红糖瓦钵煎煮，盖被发汗便好。后来有人脑瓜灵光，把姜糖做成存得住的固体丸，闲时含一粒调口防寒。

日子久了，手艺越磨越细，成了祖传秘物。

2016年列入湖南省非物质文化遗产名录，这分量，硬是扎实。

做法不复杂但讲火候。

鲜姜去皮捣泥滤汁，红糖麦芽糖入铁锅熬到"拔丝"状态，倒姜汁搅匀，摊青石板冷却后挂铁钩上反复拉扯，拉到透明带白丝，剪刀剪成三角小块。

好姜糖大小均一、色泽光亮，入口甜、脆、浓、香，辣味慢慢回到喉咙，不呛舌。

当地人讲"呷姜糖，暖心肠"。

嚼着脆中带柔，越嚼越香，那股辛甜像古城的慢日子，真叫人停不下嘴哟！

望羊麻花

说起这麻花，得从清朝光绪年间讲起。

四川一个姓史的匠人，战乱里逃到湖南石门县白云镇望羊桥，病倒在龚老板的包子铺里。

龚家人心善，不收一分钱照养了他好几年。

史师傅过意不去，把祖传麻花秘方留了下来——压面、发酵、揉坯、配料、炸制，十道工序，一道不落。这一传，就是300多年。

后来龚家包子铺越做越旺，到杨氏家族手里正式叫了"望羊麻花"。

有人讲，老一辈传男不传女、传媳不传女，这规矩硬得很嘞。

民国年间杨家用皮箩筐挑着走街串巷卖，八十年代还是摩托车送货，手艺没丢过。

做法讲究！

用五得利高筋小麦粉、白砂糖，浓香菜籽油炸。

沿用铁锅、木瓢、土灶、柔板这些老家伙，手工揉坯、对条、成型，火候拿捏得死死的。

成品金黄油亮、体型粗壮，咬一口"咔嚓"——香脆、甜而不腻、久吃不厌。

这麻花2019年列入常德市非遗名录，2015年拿过湖南农博会金奖。

石门人讲："这麻花，香得很，一口就忘不了！"

长沙臭豆腐

清光绪二十二年（1896年），湘阴人姜永贵从落棚桥老师傅手里接过油炸豆腐担子，

回家琢磨出一套卤水秘方——鲜冬笋、浏阳豆豉、香菇、青矾，往坛子里一封，半个月发酵，豆腐泡出来黑如墨。

后来他把摊子摆进火宫殿，那地方建于清乾隆十二年（1747年），道光六年重修，成了臭豆腐的"祖宅"。

老长沙人讲："闻起来臭得要命，吃起来香得要死！"这句话，传了一百三十年。

做法不复杂，但讲究。

上等黄豆泡软磨浆，点卤成坯，再丢进那坛子活卤水里，春秋泡三五个钟头，冬天得泡六到十个钟头。

捞出来沥干，茶油下锅，先170℃初炸定型，再200℃复炸至焦脆，中间戳个洞，灌辣椒油、酱油、蒜蓉。

成品外焦里嫩，黑得发亮，咬一口"咔嗤"响，里头软得像绒。

那股"臭"，是蛋白质分解出的硫化氢，说白了，臭得有道理。

如今火宫殿臭豆腐制作技艺已入国家级非物质文化遗产名录，还出口了十三个国家。

平江酱干

清咸丰七年，长寿街冷酒店老板何维丰（1847—1947）闲来无事，把剩菜汤里捞出的盐皮干用炭火一烤，嘿，这味道绝了。

从此便走上了酱干之路，取名"多珍酱干"。

有人讲，这酱干后来还成了贡品，乾隆年间就有人说它是湘味名吃，明正德皇帝路过长寿都钦点过。

长寿街出将军五十多位，出酱干何维丰一位，老话讲"出酱干和出将军，是长寿街对中国两大贡献"，这话不虚。

据传康熙年间酱干就被列为宫廷贡品，距今两百多年了。

做法讲究得很咧！

本地八月黄豆，深井泉水泡，石磨出浆，压榨成二分厚的豆腐片，切一寸见方。

卤汁用八角、小茴、肉桂、公丁、母丁等26味香料熬，再加七蒸七晒49天的豆酱原汁。

入鸡汤煮透，上篾折文火烘烤，非香樟木、桎木烧的白炭不可。

烤完浸麻油，乌黑油亮就成了。

咬一口，豆香、卤香、鸡肉香、烤香、芝麻香五香齐发，紧实有嚼劲，咸鲜带甜。平江人讲"好呷得很咯"！

沅江麻香糕

说到湖南必吃的零食，沅江麻香糕得排头一份。

这糕起于清道光元年（1821年），沅江人拿洞庭湖底黑泥糯米、

本地小芝麻、蔗糖攒出来的，到今两百年有余。

早年沅江叫"小南京"，水码头商贾扎堆，

1911年商人金涤珊集十股万块银元立了"億昌"熬坊，专做这糕。

抗战那阵子，沅江泊船上千，难民南迁，麻香糕耐放又香脆，成了路上救命干粮。有民谣唱："后湖里的水，陈义盛的女，锦林的鸡狼毫，億昌的麻香糕。"1959年国庆十周年，商业部直接调了300担进京当贺礼，一下就出了名。

做法讲究得很，糯米炒香、磨粉吸潮、芝麻炒酥碾碎、制泡糖、擦粉压眉、蒸糕切片、炭火慢烘，前后16道大工序，细分到24道。

成出来薄得像蝉翼，色泽微黄，一口咬下去"咔嚓"脆，落嘴就化了，香里带甜。

当地人喊它"麻烦糕"，不是嫌它烦，是工序实在太多，一句话：硬扎得很咯！

东江鱼

说起东江鱼，得从秦末那阵子讲起。

项羽败北，衡山王吴芮拥戴刘邦称帝，封为长沙王，子吴臣嗣位。

一日吴臣携爱妃南施泛舟郴州资兴东江之上，南施落水，被救上船却浑身发抖。

船夫说："此水源自地下五百尺，水寒刺骨，须钓江中鱼与辣椒共煮方可祛寒。"

果不其然，食后寒意顿消，味美绝伦，吴臣大赞，赐名"东江鱼"，命渔民定期运送。

这故事传了两千多年，一碗鱼汤暖了一个朝代的记忆，你说神不神？

鱼取东江湖鲜活翘嘴红鲌或鲢鱼，寸把长、指尖粗，捕捞到加工不超8小时。

宰杀、腌制、烟熏、烘烤、切块、炸制、拌料，十二道工序层层过。

茶油炸至金黄，秘制酱料一拌，肉质鲜香紧实，无泥腥，软硬适中，越嚼越有味。

毛毛鱼酥软连骨能嚼，鱼排劲道、鱼尾耐啃、鱼片薄脆，四样各有各的性格。

当地人讲"恰得辣，霸得蛮"，这话搁东江鱼身上，再贴切不过。

如今这鱼已是国家地理标志保护产品，粗蛋白≥18%，不饱和脂肪酸≥5.9%，温中益气暖胃，老少皆宜。

长沙奶糕

说长沙奶糕，得从1910年（清宣统二年）讲起。

江永寿堂创始人江恒寿，拿优质米粉、白砂糖配疳积糖，鼓捣出个"肥儿糕"。

这东西清香味甜、易消化，还能驱虫，奶味足得很，一出来就在长沙炸了锅。

各大糕点作坊蜂拥仿造，成了行当里的硬通货。

据《长沙市志》记载，清乾隆元年（1736）从江西传来烘糕法，早期只制奶糕，后来才有条子糕、白糖片。

做法不复杂，冷牛奶加大米粉、糖，小火搅拌到粘稠糊状，倒模具冷却成型。

糕呈正方形，色泽洁白，质地细腻，含黄豆、奶粉、米粉。

入口绵软，奶香直窜鼻腔，甜而不腻。沸水一冲就化，老人伢子都爱，"细伢子吃了不疰夏"！

如今奶糕虽多转作幼犬粮，但老长沙的味道还在。

一块糕，百余年，吃的不是点心，是记忆。

长沙牛奶法饼

说起法饼，那是200多年的老货了。

清末那会儿，店家专挑夜里卖，灯一亮，整条街都是甜酒香，夜市愣是被它带火的。

创始人唐氏不小心把甜酒倒进面粉里，舍不得丢，揉成饼一烤——嘿，成了！

"发饼"谐音"发家发福"，婚丧嫁娶都摆它。

到民国，九如斋创始人饶菊生1915年开店，牛奶法饼后来拿了全国儿童食品展览会金奖，硬是把一块饼做成了长沙招牌。

老辈人讲，"细伢子春游人手一两个法饼"，五分钱一个，不要粮票，穷日子里最踏实的甜。

做法讲究得很。

甜酒汁代替酵母，发酵12到24小时，再加奶粉、饴糖、小苏打揉匀，擀成扁圆形，直径约10厘米，厚1.5厘米，炉温180到190度烤。

出炉表面乳黄，底面棕黄，一口咬下去松软带蜂窝孔，

奶香裹着酒酿味，甜而不腻。

湖南人讲"好恰得很"，配杯豆浆就是顶好的早饭。

如今湘潭法饼技艺入了非遗名录。

湖南的零嘴，没一样是闲出来的。

牛肉干是给牛过生日的人省下的，蜜饯是女人拿刀一刀一刀刻出来的，麻花里缠着一个外乡人的命，臭豆腐黑得发亮，咬开才知道心是软的。

这地方连零嘴都倔，先苦后香，先硬后软，嚼到最后才回甘。
