做了十几年饭，这6道菜出镜率最高，简单、省事，还特别下饭|下饭|土豆|滑蛋|米饭|美味菜肴|肉丝|肉末|豆腐|豆芽

鸡胸肉滑蛋这道菜，原文说得直白，减脂餐不一定难吃，这话我认。很多人一提鸡胸肉就皱眉头，觉得干、柴、像嚼布。其实鸡胸肉本来是高蛋白低脂肪食材，做法对了，照样嫩。重点就在切薄片和淀粉上浆，锁水这一步要是马虎，口感就塌了。蛋液半凝固的时候把肉倒回去，这种做法跟广东滑蛋思路有点像，火候一快一慢，口感就分出来了。

家里真要有人想控制油脂，这道菜挺合适。鸡胸肉比五花肉轻一些，两个鸡蛋又补充脂肪和蛋白质，吃完不空肚子。有人总觉得减脂就得啃黄瓜、吃水煮菜，那可太难受了，时间长了谁都扛不住。能把鸡胸肉炒得嫩一点，配上滑蛋和葱花，照样能吃得香。饭桌上有了这种菜，才不像是在受罪。

醋溜豆芽是那种看起来不起眼，实际一上桌就空盘的菜。豆芽便宜，脆生，水分足，热锅快炒最见功夫。大火、蒜末、干辣椒、沿锅边淋醋，这几个动作一连上，酸味和辛香立刻就出来了。山东人吃饭讲究什么，讲究一个痛快。炒豆芽也是一样，不能慢吞吞焖着，得利利索索快炒，才有那股清脆劲儿。

土豆鸡块就更不用说了，这几乎是北方家常菜里的老熟人。原文写得很实在，鸡腿块不用焯水，直接下锅煸，把鸡皮里的油逼出来，再加姜蒜花椒和十三香，最后放土豆和开水慢炖。这个做法接地气，土豆吸汤，鸡肉入味，锅里咕嘟二十五分钟，香味能从厨房飘到客厅。
