马上就要迎来末伏了！记住吃1瓜、食2肉、喝3汤，养好底子迎接秋天|丝瓜|末伏|猪肚|绿豆|美味菜肴|莲子|虾仁|银耳|陈皮|雪梨

前两天有个场景挺扎眼：中午刚过，屋里热得像扣了个蒸笼，老伴儿端着冰镇饮料刚想喝，我赶紧给拦下来了。不是我爱管闲事，是这阵子马上进末伏了，外头太阳还在使劲晒，早晚却又开始带点凉气，身子骨最容易被它来回折腾。

老话说得实在，秋后一伏，热死老牛。别看立秋已经过去了，末伏这十来天，热没退干净，燥气倒先冒头了。很多人这时候犯懒、没胃口、身上发沉，不一定是没休息好，很多时候就是吃法跟不上节气了。

我在山东这边生活久了，最明白一个理儿，越到这种节骨眼，饭桌上越不能胡来。冰饮、凉菜、重油重辣，一顿两顿图痛快，肠胃可不跟你讲情面。人一到四五十岁，家里还有老人孩子一起吃饭，更得讲究个温润、不折腾，吃进去得舒服，肚子里才不闹妖。

今天这篇就围着末伏吃什么说开。核心就一句话：少贪凉，多补水，肉别乱吃，汤别省。丝瓜、牛肉、鲜虾仁，再配上几锅实打实的家常汤，菜市场都能买齐，做法也不绕弯子，家里灶台一开火就能整明白。

先说一瓜，丝瓜。

这个时候的丝瓜正嫩，水分足，价钱也亲民，买回来削一削、切一切，清清爽爽。它最适合末伏，不是因为它多稀罕，是因为它不折腾胃口。夏天一过半，很多人嘴里发干，吃啥都觉得腻，丝瓜这种东西，入口顺，做汤做炒都合适，老人孩子都能跟着吃两口。

我家里做丝瓜，最常见的就是丝瓜荷包蛋汤。丝瓜两根，鸡蛋两个，配点姜和小葱，再来几粒枸杞，家常得不能再家常。丝瓜切好后先泡一下淡盐水，这一步别偷懒，不然下锅容易发黑，看着就不精神。鸡蛋先煎成荷包蛋，切大块，锅里爆香姜葱，再下丝瓜简单炒一炒，随后把鸡蛋放进去，冲上一锅滚水，大火煮几分钟，汤色慢慢变白，闻着就鲜。

这种汤不靠猛火力气，也不靠大油大盐，靠的是食材本身的味道。山东人讲究实在，饭桌上有这么一碗，配馒头、配米饭都行。孩子放学回来喝一碗，胃口立马就开了。

再说两种肉，牛肉和鲜虾仁。

牛肉就是个好东西。老百姓常说牛肉是平补，意思就是不太燥，也不太寒，吃起来稳当。做法我偏爱洋葱青椒炒牛肉，快手，香，还下饭。鲜牛肉切薄片，加姜丝、生抽、盐、淀粉抓匀，最后淋一点油，锁住水分，腌个十五分钟。洋葱和青椒切好，蒜片备着。锅热油热，牛肉下去快速滑炒，颜色一变就先盛出来，别在锅里耗，肉老了就可惜。随后把洋葱、青椒炒断生，再倒回牛肉，大火翻匀，撒一点孜然或者辣椒面，香气一下就起来了。
