中伏天尽情吃，既能升阳通便又养肝，做法简单别不懂就错过了|中伏天|养肝|冬瓜|夏天|山药|猪骨汤|芹菜|莲子|鸭肉

我家夏天最热的时候，锅台像蒸笼，老婆还得带着俩十来岁的小子上学放学。那天我把冬瓜切开，厚厚一片铺下去，又把大鸡腿腌好码在上面。锅盖一盖，中火十二分钟，屋里就有股温吞的鲜香味儿，孩子们连水都不怎么喝，直接盯着锅看。等出锅撒葱花的那一下，连我爸妈都说这味道省事又下饭，刚好符合我们这种一家七口挤一张桌的日常。

其实夏日所谓打卡，不是非得拍多花里胡哨的东西。对咱这种山东人来说，打卡最硬核的是每天能不能把家里吃得舒服：清爽不寡淡，肉有劲儿但不腻，汤喝了不顶胃，孩子爱吃，大人也能吃出精神头。下面这三道，我在家里轮着做，尤其适合夏天的三餐节奏，端上桌就是那种能让人多夹两筷子的踏实感。

第一盘是鸭肉炒芹菜。你要是问夏天什么菜最像在帮你降火又不掉份量，芹菜算一个。鸭肉也有讲究，肥香不油腻，和芹菜一搭，咀嚼起来脆里带润。

我一般是先把鸭肉用少许生抽和料酒腌制十五分钟。别小看这十五分钟，肉里有底味，炒的时候才不容易偏柴。锅里下少许油，鸭肉先炒到表面金黄，还得带点微焦的边，这一步是为后面上酱做铺垫。炒好先捞出来，留着锅底余油。

剩下那点余油别急着倒掉，小火爆香姜片、蒜瓣、花椒和八角，味道会从厨房里一层层往外推。然后下两到三汤匙黄豆酱，小火炒出酱香。香味上来了再倒回鸭肉翻炒，确保每块鸭肉都裹上酱色。这里我会加一点生抽，少许老抽负责调色，再加糖把酱味托起来，不然太冲。最后把鸭肉连同酱色一起倒入砂锅，加热水，水开后小火焖煮四十分钟。

四十分钟不只是让肉软烂入味，关键是让酱汁变得浓稠。等焖好后开大火收汁，保留一部分浓稠酱汁。另起锅少油，芹菜炒到断生，加盐调味。最后就是重点操作，大火快速翻炒，把收好汁的鸭肉和酱汁一起倒进芹菜锅里，翻两下就出锅。芹菜不能焖太久，否则会发黄发软，家里孩子也不爱吃。这个配方在我家属于一做就见底的菜，山东人吃饭讲究个实在，鸭肉配芹菜既有肉香也有清口感。

第二道是黄皮果山药莲子猪骨汤。它在夏天属于那种不抢戏但很顶用的存在，尤其适合家里老人牙口一般、孩子夏天容易没胃口的时候。黄皮果加上莲子和山药，汤的口感是温和的，不是那种一口苦味顶到嗓子眼。

我做这道汤按量不爱太抠，十二个黄皮果配五个无花果，再来两颗椰枣，莲子十五克，山药半根，猪骨三百克，生姜一片就够一家人喝一顿。关键步骤是先把猪骨加姜片焯水备用。焯水这步不省，夏天气温高，处理不好汤会腻也不干净。

黄皮果表皮要搓洗，带点盐来搓，搓完再剪十字口挤出果核。别觉得麻烦，核在里面会带味，挤出来口感更稳。所有食材清洗干净后，一起放进汤锅，加足量清水。大火烧开转慢火煲一小时。这里我不建议熬太短，猪骨要软，山药要融进去，汤喝起来才不寡。

第三盘是冬瓜蒸鸡。你要是怕夏天炒菜油烟大，怕做复杂又怕味道不够，蒸这道就够。冬瓜清爽，鸡肉厚实，虫草花在上面提鲜，口感不会单调。它也是我在家最常用的那类懒人菜，但上桌一点不丢脸。

冬瓜去皮切成一厘米左右厚片，平铺在平底锅底部。再铺上新鲜虫草花，然后把腌好的鸡腿肉平铺在上面。盖上锅盖，中火煮十二分钟。这个十二分钟很关键，火大了鸡肉容易变柴，火太小冬瓜出水过多，味道会散。

出锅前撒葱花就能上桌。吃的时候你会发现冬瓜不是那种软烂稀汤的口感，鸡肉蒸出来的鲜味会浸在冬瓜里，筷子夹起来有汁但不腻。家里俩儿子喜欢拌着冬瓜把鸡肉一起吃，我爸妈更喜欢这种不费劲的下饭方式，刚吃完也不觉得嘴里发油。

说到夏日生活打卡，我最想把话讲明白：打卡不是为了展示厨艺，而是为了让一家人每天都能吃到不折腾的好味道。你看我这三道，鸭肉炒芹菜是酱香和清口并存；猪骨汤是温和补足；冬瓜蒸鸡是少油少烟还特别下饭。它们都在围绕同一件事，那就是把夏天的餐桌调到舒服的频率。

最让我安心的不是孩子夸味道好听话，而是他们端起碗时的状态。吃饭不拖拉，筷子有节奏，饭后不闹肚子不抱怨辣不辣。老人吃得慢，汤能喝得下去。老婆忙完也能坐下安心吃两口。锅里的味道不是为了拍照给别人看，而是为了把这一家人的日子稳住。
