学会这个蒜香排骨做法，外酥里嫩香到连手指都想舔干净|淀粉|美味菜肴|胡椒粉|花雕酒|蒜香排骨|调料

这道蒜香排骨，靠的不是花架子，靠的是把每一步都做到位。先洗去血水和腥味，再把水分彻底擦干，让盐、花雕酒、生抽、胡椒粉顺着肉缝钻进去，排骨才会有底味。蒜末先洗再炸，去掉发粘感，避免糊锅和结块；蒜汁留下来，后面还能把蒜香再往肉里拽一把。裹薄薄一层干淀粉，下锅先看肉厚的，五成热油炸到七八分熟，再复炸逼出油分，最后颜色到枣红，外壳焦脆，里面还是嫩的，这套逻辑很实在，没一点虚头巴脑。

说白了，这道菜能拿厨王，不是因为它多稀罕，而是因为它把家常菜做出了分寸感。山东老百姓最懂这个理，做菜不是瞎猛火一通干，得讲究火候、腌制、回炸、出香这几个关口。蒜香排骨看着简单，真要做出饭店里那股劲儿，细节一个都不能丢。排骨先蘸干水分，是为了让调料更好渗进去，这一点很多人平时都容易忽略。厨房里有些事就跟做人一样，表面一抹干净，里头才能进味。

现在很多人做排骨，最常见的毛病就是图快。排骨洗完直接腌，水哗哗的，结果盐挂不住，味儿也钻不进去，进锅一炸还容易溅油。蒜末也是，拿来就下锅，表面那层粘液一遇热，立马发黏成团，颜色一深就苦。蒜里边的关键成分是大蒜素，遇热太急容易出问题，所以先洗、再擦、再中小火慢炸，这才是正路子。家里做饭，图省事可以，图省步骤不行，省掉的往往就是味道。

先说排骨处理。买排骨的时候，尽量挑肋排或者小排，肉不要太厚，骨头边上带点肥边更香。切块后先用清水冲一遍，把表面的血水洗掉。接着把水分擦干，这一步真不能偷懒。厨房纸一按，排骨表面从亮晶晶变成微微发干，后面盐和料酒才更容易往里走。盐先下，排骨会慢慢发滑，手感像有点涩又有点顺，这就是盐在起作用。

花雕酒和生抽的搭配也挺讲究。花雕酒不是为了把颜色染重，而是去腥提香，闻着那股酒气冲上来，肉味就不那么冲了。生抽少来一点，主要给豉香打底，别整得太黑，不然炸出来发乌，卖相就差了。胡椒粉往里一撒，去腥味还带一点微辣，吃起来更立体。抓匀以后放一会，最好冷藏半小时以上，让味道慢慢吃进去。老话说得好，腌肉不是下命令，是让它慢慢接受安排。

蒜末这一关，很多人真栽过跟头。蒜切好后要先过水，洗掉表面的黏性物质，再用厨房纸压干。别小看这一下，等会儿炸蒜时，油锅里能安稳不少。蒜末下锅前，油温不用高，三成热左右就行，蒜一多，热得太猛，外面糊了里头还没香透。中小火慢慢炸，锅也别死盯着不动，时不时晃两下，让蒜受热均匀。三到五分钟，蒜末从白色变浅黄，再到浅金黄，香味就开始往外窜了。这个时候一定要捞，晚一口就容易发苦，蒜香变蒜苦，整锅菜都跟着受罪。

炸好的蒜末其实已经很香了，可这道菜厉害的地方，还在于蒜汁能再接一把火。很多人只知道蒜末能增香，不知道蒜汁也很顶。把炸好的蒜和蒜油稍微分一分，蒜香味更细，后面和排骨一拌，味道不是浮在表面，而是顺着淀粉壳往里钻。排骨这时再回到盆里，抓匀蒜汁，让每一块都沾上香气，像给肉穿了件蒜香外套，进锅一炸，香味就有了层次。

油温到五成热再下锅，排骨要分批来。肉厚的先下，别一股脑全倒进去，不然油温一下掉下去，容易炸成半煮半闷。先让它定住表面，等起了小焦壳，再放薄一点的。这个时候别乱翻，晃锅就行，让排骨自己在油里找位置。八到十分钟左右，排骨基本就能炸到熟透。判断熟没熟也有门道，骨头两头露出来了，肉基本就离熟不远了。别光看颜色，颜色好看不等于里面熟透，厨房里最怕图个面子，里面还生着，那可不行。

第一遍炸完，很多人就想直接上桌，其实还差一道劲儿。排骨想要那种外脆里嫩的感觉，复炸很关键。油温升到五到六成热，微微冒青烟，排骨下去半分钟左右就够。第二次炸是把表皮里的油逼出来，让壳更脆，颜色也更深一点，像枣红色那样，特别馋人。这个动作听着简单，实际上把口感拉开了。没有复炸，表面软塌塌；有了复炸，咬下去咔的一声，里头肉汁还在。

说到蒜香排骨，最迷人的还是它那股家常劲儿。它不是大席面上那种端着架子的菜，也不是看着复杂其实没味道的花活。它一上桌，孩子先盯着外壳，老人闻着蒜香直点头，媳妇尝一块，知道你今天没糊弄。家里两个小子要是在旁边，那更不用说，手指头上沾点油都要舔干净。蒜香、肉香、油香混在一起，最容易把一桌人都拽到同一张桌子上来。
