处暑一过，山东这边早晚就有点凉气了，风一吹，整个人都懒洋洋的，腿脚发沉，饭也想吃点热乎又顺口的。原文讲的就是这个理儿：入秋以后，别光盯着贴秋膘，先把高钾、高蛋白、好消化的时令菜端上桌，身体才更容易舒坦。三道菜里，白灼秋葵负责清爽，南瓜焗排骨负责顶饱，红烧芋头负责软糯下饭，逻辑很简单，都是顺着季节吃，顺着家里人的口味做，既讲营养，也讲烟火气。先从秋葵、南瓜、芋头这三样秋天常见食材说起，再把做法、营养、适合的人群和家常吃法捋明白，这篇文章的劲儿就出来了。
那天我在厨房里忙活，儿子在客厅喊饿，我妈在一旁说秋天就得吃点顺口的，别整太油。说实话，这话很实在。秋天不是大鱼大肉瞎往上堆的时候，天气一转凉，人的脾胃也跟着变得有点挑剔。中国居民膳食指南里一直强调，日常饮食要食物多样，蔬菜水果、优质蛋白、全谷杂豆都得有，秋天尤其适合把应季蔬菜和肉类搭着吃。原文这三道菜，正好把这个思路落到了锅里，不虚头巴脑。
先看白灼秋葵。很多人一提秋葵，第一反应就是黏糊糊的，不好下口。其实这东西真不赖，钾含量高，膳食纤维也不错，做熟以后口感脆嫩，适合秋天吃。原文里说得细，先用盐搓洗，把表面的绒毛和杂质处理干净，这一步不能省。秋葵做不好，往往不是火候不对，就是没洗利索，入口有点涩，家里老人孩子都嫌弃。白灼的做法最稳，水开以后加点油和盐，再下秋葵，两分钟左右就差不多了，捞出来过凉白开，颜色还精神，口感也脆。调料用蒜蓉、蚝油、生抽、盐、淀粉和清水兑成汁，热油一浇，蒜香一下就出来了。
这道菜妙就妙在，不靠重油重辣撑场面，靠的是食材本身的清甜。秋葵的口感有点像脆生生的豆荚，配上蒜蓉汁，老人能接受，孩子也不排斥。我家两个小子以前见了秋葵直皱眉，后来我学着这么做，端上桌一会儿就没了。秋葵里有些可溶性膳食纤维，吃起来顺口，对秋天容易出现的肠胃发紧也更友好。别小看这一盘绿菜，真是有点四两拨千斤的味道。
再说南瓜焗排骨。这个菜一上桌，家里饭桌的氛围就不一样了，硬菜有了，香味也冲上来了。排骨这东西，山东人熟，家里来客也常做，但光炖排骨容易一锅乱香，配上南瓜，口感立马变得细腻。南瓜本身带甜味，富含类胡萝卜素和碳水，秋天吃很讨喜。原文里先给排骨做腌制，两勺生抽、两勺蚝油、一勺料酒，再加姜丝、砂糖、盐、淀粉、黑胡椒，抓匀腌二十分钟。这个步骤很关键，既去腥，又给肉提前打底味，后面炖出来才不寡。

排骨先煎到两面金黄，这一步特别提香。很多人怕麻烦，直接下锅炖，结果肉香出不来，汤也显得单薄。煎过以后，油脂滋滋冒，肉表面形成一层焦香，吃起来更有味。砂锅里先炒南瓜，再把排骨铺上，加半碗开水，小火慢炖十三分钟。这个时间拿捏得挺巧，南瓜不会炖烂成泥，排骨也能熟透入味。最后撒葱花和小米辣，颜色一铺，饭桌上的气势就有了。
这菜特别适合家里有老有小的场合。南瓜软糯，老人牙口不好的能吃；排骨有蛋白质，家里干活的、长身体的孩子也能吃饱。南瓜里钾、维生素A前体含量都不低，秋天吃它，嘴里甜，肚里也舒服。现在不少人一到秋天就爱吃重口，结果晚上吃完肚子胀，睡也睡不好。南瓜焗排骨这种搭配，既有肉香，也有蔬菜的缓冲，搁我们山东老家话说，就是既能压得住场，又不至于把人吃腻歪了。
第三道红烧芋头，走的是软糯路子。小芋仔煮熟去皮，再切块，猪肉炒香后加蒜末、生抽，倒入芋仔，老抽上色，辣椒面提味，盐和水跟上，几分钟就能出锅。这个菜看着朴素，实际上很有老家味。芋头这种食材，到了秋天就特别受欢迎，口感绵，咬下去有点沙沙的，和米饭一拌，真是能多扒拉两碗。芋头里有淀粉，也有一定的膳食纤维，做熟后容易消化，适合胃口不太开、又想吃点热乎东西的人。
