朋友们，我做美食博主这些年跟后厨的师傅们混熟了，没事儿就爱听他们唠点“行业秘密”。说真的，有些菜啊，在菜单上看着花红柳绿，名字取得也吉利，什么“四季发财”、“鸿运当头”，听着就让人咽口水。可你要是真点了，那就是给后厨“送人头”去了。为啥？因为有些食材，厨师自己看着都摇头，更别提吃了。今天就来说说，我去饭店点菜时，打死都不会碰的5种菜。这些菜很多人不仅不反感，还经常点，觉得有排面。咱们把这话说在前头：这篇文章不是砸场子，是帮你避雷，让你这钱花在刀刃上，吃个明白，吃个舒坦。
第一种：油炸系列里的“回锅油战士”——比如炸春卷、炸酥肉、炸茄盒
你发现没有，但凡饭店里那些金黄金黄、咬一口嘎嘣脆的油炸小食，尤其是那种拼盘里的，十有八九有问题。不是食材不新鲜，而是那锅油。正经饭店，生意再好，也不可能每分钟都在炸东西。那油怎么办？早上开火倒一锅新油，炸完早上的油条、麻团，中午接着炸鸡腿、炸鱼，晚上继续炸你的春卷。这油从清澈见底炸到酱油色，从花生香炸到一股子哈喇味。厨师自己想吃点炸货，都是偷偷拿个小锅自己炸，绝对不吃大锅里的。为什么？因为反复高温加热的油里，那玩意儿的危害咱就不背化学公式了，你就记住：吃多了嗓子眼发紧，第二天脸上准爆痘。而且为了掩盖那股陈油味儿，师傅会猛下五香粉、十三香，你吃着觉得香，其实全是佐料在给你打掩护。所以，下次点菜，看到那种颜色过深、外壳过于硬挺的炸物，赶紧划走。
第二种：水煮鱼、毛血旺里的“嫩肉科技”
这道菜是川菜馆的台柱子，很多人无它不欢。但我跟你说，正宗的水煮鱼，鱼肉片出来是略带透明、下锅一烫就卷边的。可你想想，你在普通饭店吃到的那种，鱼片是不是白得发亮，嫩得跟豆腐一样，夹起来还颤颤巍巍，放嘴里根本不用嚼？恭喜你，吃到“嫩肉粉+高弹素”的杰作了。后厨师傅跟我说，现在有些店，进的都是冷冻巴沙鱼或者草鱼片，为了让它有那种“入口即化”的幻觉，得用复合磷酸盐泡。
这东西本身合法，但用量把握全靠师傅手感，很多小店是往死里放。泡完的鱼肉，体积能胀大20%，又重又嫩。厨师自己从来不吃这玩意儿，他们私下管这个叫“魔术肉”。还有那红彤彤的油，看着吓人，其实很多是辣椒精和色素调的，为的是省干辣椒的成本。你想想，正常要熬出一盆香辣红油，得多少斤辣椒？小店舍不得。所以，如果你真爱这道菜，去那种活鱼现杀、明档厨房的店，否则，别拿自己的舌头当试验田。
第三种：铁板牛柳、黑椒牛柳——牛肉的“软化手术”
这道菜可是下饭神器，点单率极高。但我要告诉你一个残酷的真相：你吃到的那条嫩滑无比的牛柳，很可能根本不是牛身上该有的纹理。牛里脊虽然嫩，但它有肌肉纤维，手撕是有纹理感的。可有些店里的牛柳，吃起来粉粉的、滑滑的，像在吃午餐肉。那是因为，他们把便宜的、带筋膜的下脚料，用木瓜蛋白酶和食粉（食用碱）狠狠“腌”了一晚上。碱能破坏肉的纤维结构，让老肉变嫩，但同时也把牛肉本身的鲜甜味给破坏得一干二净。
最后全靠厚厚的黑胡椒酱汁来救场。那酱汁里，糖和味精是主角。厨师在试菜时，只会夹一小块尝尝咸淡，绝不多吃一口，因为他们知道，这肉已经“不是肉了”。更关键的是，铁板烧得滚烫端上来，滋啦作响，那动静听着诱人，但很多店那个铁板根本不怎么洗，用钢丝球随便蹭蹭，上面糊着上一桌的焦黑残渣，高温一加热，那股子糊味儿全被酱汁盖住了。所以，想吃牛肉，点个清炒牛肉片或者番茄炖牛腩，起码能看到肉的真实模样。
第四种：各种“干锅”系列——干锅肥肠、干锅花菜、干锅土豆片
干锅，听着就热火朝天，特别有烟火气。但这里面有个猫腻，叫“回锅再利用”。你仔细品，很多干锅里的配菜，比如花菜、土豆片，是不是边缘焦香、里面却水叽叽的？那是因为它们都是提前过油预制好的，甚至有些是中午卖剩下的凉菜，晚上回个锅，撒把孜然辣椒，就变成干锅了。最要命的是肥肠。肥肠这东西，清洗起来特别费工夫。正经饭店要拿面粉和醋反复搓洗，再煮上一个多小时。可有些店为了省事，买那种处理好的半成品冻货，本身就带一股子腥臊味。为了压住这味儿，干锅做法成了最佳掩护——重油、重辣、重花椒，再加点火锅底料一炒，你根本吃不出它原本是否新鲜。厨师自己吃肥肠，只吃白灼或者红烧的，因为那种做法，食材新不新鲜一目了然。干锅里的肥肠，他们碰都不碰，因为他们知道那底下垫着的一层洋葱和蒜头，有一半是为了撑场面，让你觉得量大实惠。
第五种：颜值最高的“果盘”和“蔬菜沙拉”
最后这个，你可能觉得意外。这玩意儿不用烹饪，总该安全了吧？错。你去饭店吃饭，是不是最后都喜欢点个大果盘或者蔬菜沙拉清口？我告诉你，后厨切水果和做沙拉的师傅，跟炒菜师傅用的不是一块砧板，这是好事。但问题出在“处理”上。为了让切开的苹果不发黑、生菜脆生生，很多店会用一种叫“抗氧化剂”的东西泡一下，或者直接过一遍冰水。这本身问题不大，大问题在于：那些做沙拉的小番茄、黄瓜片、紫甘蓝丝，很多是批量洗的。
怎么洗？后厨忙起来，直接在水池里涮两下就捞出来了，那水池可能刚洗过抹布。更别提，有些店的果盘，用的是切掉烂疤、剜掉黑心的“水果边角料”，摆得漂漂亮亮，但你吃的那块哈密瓜，可能挨着腐烂的部分。厨师自己吃水果，都是自己拿刀现削一个完整的，绝对不吃后厨切好的拼盘。所以，如果非要吃，就点个整个的上，比如“现切西瓜”，看着他从冰箱抱出来一刀两半，那才放心。http://m.ipwvr.cn/Article/details/593073.sHtML
