明日寒露，无论多忙，别忘吃“寒露8宝”，应季而食，安稳过秋冬|寒露|排骨|核桃仁|秋葵|美味菜肴|芋头|茄子|菠菜|葱花|香菜

寒露一到，露气凝寒，风里都裹着桂香和秋霜的清冽。老辈人常说“寒露补一补，整年不受苦”，这时候盲目贴膘不如顺着时令吃，刚好这“寒露8宝”全是当下最鲜的物产，做法简单耗时少，再忙也能随手做两道，润走秋燥攒足底气，整个秋冬都暖乎乎的踏实。

一、芋头蒸排骨

食材：排骨、芋头、豆豉、蒜头、小米辣、葱花

调料：生抽、盐、蚝油、鸡粉、生粉

做法：

芋头切小块铺盘底；排骨加生粉加水抓洗，冲净沥干。

蒜末、小米辣、豆豉浇上热油激香，加生抽、盐、蚝油、鸡粉搅匀。

料汁倒进排骨，加3勺生粉抓拌至粘稠，铺在芋头上面。

水开上锅蒸30分钟，出锅撒葱花。

二、红烧茄子

食材：茄子2根、大蒜4瓣、青红椒各1个、盐、淀粉1勺、生抽半勺、白糖小半勺、食用油

做法：

1.茄子切片，撒少许盐抓匀静置20分钟杀出水分，用力挤干水分，裹上一层淀粉。

2.起锅倒油，油温六成热，放入茄子翻炒至变软熟透盛出。

3.留底油，爆香蒜末、青红椒，倒入茄子。

4.加半勺生抽、小半勺白糖，大火快速翻拌均匀即可装盘。

三、油焖大虾

材料：大虾一盘，姜蒜末，葱花，生抽，蚝油，白糖，陈醋，番茄酱

1.锅中倒入适量的油，油温升高再把大虾平铺放入。

2.煎到虾壳底部微微发黄再翻身，按住虾头把虾油挤出来。

3.加入姜蒜丁炒至香味四溢后，淋入用生抽，蚝油，白糖，陈醋以及番茄酱调配好的酱汁。

4.小火焖2分钟入味，大火收汁后撒上葱花即可出锅。

四、核桃拌菠菜

所需食材：菠菜400克、核桃仁80克、大蒜3瓣、生抽2勺、香醋1勺、香油1勺、盐少许、白糖半勺、白芝麻1小把、食用油少许。

步骤：

菠菜择去老叶和烂叶，切掉根部，放入淡盐水中浸泡5分钟，再反复冲洗两三遍，尤其叶柄根部容易藏泥，要逐棵洗净。
核桃仁放入无油平底锅，开小火慢慢焙香，不断翻动，听到轻微噼啪声、闻到坚果香即可盛出。放凉后用手掰成小块，保留颗粒感。
锅中烧宽水，水开后加少许盐和几滴食用油，放入菠菜焯烫约30秒。加油能让菠菜颜色更翠绿，盐能帮助定味。
菠菜变软立刻捞出，放入提前准备好的凉开水中过凉，这样能保持爽脆口感和鲜亮颜色，也能避免余温把菜叶焖黄。
过凉后的菠菜捞出，用手轻轻挤去多余水分，但不要挤得太干。然后切成几段，放入大碗中抖散，方便后续拌匀。
大蒜切末，放入小碗，加入生抽、香醋、香油、盐和白糖，搅拌到糖盐融化。料汁可以先尝一下，酸咸度按自己口味微调。
把核桃仁倒入菠菜碗中，淋上调好的料汁，撒上白芝麻，用筷子从下往上翻拌均匀。装盘后尽快食用，口感最清爽。

五、秋葵炒牛肉

食材：牛肉，秋葵，姜蒜，小米辣

制作步骤：

牛肉沿逆纹理切薄片，加入生抽、料酒、淀粉、油抓匀腌制十分钟，秋葵洗净，水烧开下锅焯水一分钟捞出切成斜段。
热锅倒油，热油下入牛肉炒散到变色盛出来，用底油放入姜蒜末、小米辣炒出香味。
倒秋葵下锅大火翻炒30秒，倒回炒好的牛肉，加入生抽、蚝油、盐、糖调味，开大火炒匀出锅。

六、清蒸鲈鱼

所需食材：新鲜鲈鱼一条（约600克）、生姜一块、大葱两根、红椒半个、蒸鱼豉油三勺、料酒一勺、食盐少许、食用油两勺、香菜少许。

步骤：

将鲈鱼去鳞、去腮、去内脏，反复冲洗干净，尤其注意鱼腹内的黑膜要刮净，然后在鱼身两侧各划三刀，方便入味。
生姜一半切片、一半切丝，大葱一半切段、一半切丝，红椒去籽切细丝，香菜洗净切段备用。
将鱼放入盘中，鱼身内外抹上少许食盐和料酒，鱼腹和刀口处塞入姜片和葱段，腌制十分钟去腥。
蒸锅中加水大火烧开，水沸后将鱼盘放入蒸屉，盖上锅盖，保持大火蒸八分钟，关火后虚蒸两分钟。
取出鱼盘，倒掉盘中蒸出的腥水，拣去姜片和葱段，将葱丝、姜丝、红椒丝均匀铺在鱼身上。
锅中烧热两勺食用油，待油微微冒烟时，将热油均匀浇在葱姜丝上，激出香味。
最后沿盘边淋入三勺蒸鱼豉油，撒上香菜段即可上桌。

七、核桃小米粥

食材

核桃仁、小米、清水适量、少许枸杞

制作步骤

小米淘洗干净，用清水浸泡十分钟，更容易煮出米油、软糯顺滑。
核桃仁去掉薄衣，清洗干净，避免发苦影响口感。
锅中加入足量清水，大火烧开后倒入小米。
转中小火慢煮二十分钟，煮至小米开花、汤汁浓稠。
下入核桃仁，继续小火熬煮十分钟，让核桃营养融入粥中。
最后放入少许枸杞，焖煮两分钟即可关火，无需加糖。

八、羊肚菌乌鸡汤

【食材准备】：乌鸡一只、羊肚菌3-4个、老姜5克、当归2克、食盐、清水适量。

【制作方法】：

第一步：把乌鸡处理干净后冲洗干净，然后锅中放入适量冷水，接着将乌鸡放入锅中，焯水10分钟后捞出，最后再把乌鸡表面的浮沫冲洗干净。

第二步：把羊肚菌放入冷水中浸泡半小时左右，然后把羊肚菌捞出，再用自来水冲洗干净。
