西餐菜单上，烤时蔬牛肉粒总是自带吸引力，焦香饱满的牛肉块搭配各色缤纷时蔬，肉香混合着蔬菜本身清甜，迷迭香的独特香气萦绕其间，不用复杂厨艺，依靠空气炸锅就能在家完成。没有多余油脂，营养搭配均衡，不管作为正餐主食或是轻食简餐都十分合适，新手也能轻松上手，不用守在灶台边翻炒，把食材预处理好交给机器，静待美味出炉。
准备食材，优先选用牛腩，肉质肥瘦相间，烤制之后软嫩多汁，搭配西兰花、小番茄，还可以额外准备甜玉米、胡萝卜、整颗大蒜和一小枝迷迭香丰富风味。先处理牛肉，牛腩切成大小均匀的肉粒，放入碗中，加入一勺食用油，撒上适量黑胡椒碎与食盐，充分抓拌，让调料裹满每一块牛肉，静置腌制半小时。腌制的过程是牛肉入味的关键，油脂锁住肉汁，黑胡椒奠定基础风味。趁腌肉的空档处理蔬菜，西兰花切小朵放入沸水短暂焯水，捞出沥干水分，提前焯水可以避免后续烘烤发干发黄，保持翠绿鲜亮的色泽。胡萝卜切滚刀块，玉米切成厚段，小番茄洗净保留完整果实，所有耐烤的蔬菜放入大碗，同样加一勺食用油、黑胡椒和盐，拌匀腌制半小时，让蔬菜提前吸足调味。
全部食材腌制完成，把牛腩粒、胡萝卜、玉米段、整蒜和迷迭香铺入空气炸锅炸篮，平铺不要堆叠，保证受热均匀。设置180摄氏度烘烤十分钟，时间到后取出炸篮，将牛肉和蔬菜全部翻面，继续以180度烘烤十分钟，这一步翻面是为了让牛肉四面都烤出焦香外壳，内里汁水牢牢锁住。经过两轮烘烤，牛肉已经基本成熟，这时放入不耐久烤的西兰花与圣女果，再次送入空气炸锅，180度烘烤十分钟就可以结束。西兰花和小番茄烘烤时间不能过长，短时间高温烘烤，既能激发出果香，又可以保留脆嫩口感，不至于烤软塌掉。
