推荐一款我心里设想了好久终于付诸实践的面包。面包用料简单但超级好味,洋葱经过焙烤香味非常浓郁,和黄油搭配在一起,味道简直了。

洋葱奶油卷的做法

  1. 取一个中等大小的洋葱,剥去外皮后切成指甲盖大小的颗粒,平铺在烤盘上,放入烤箱,120度烘烤40分钟。取25克洋葱干备用。

  1. 面团材料放入面包机搅拌至扩展阶段。

  1. 然后加入洋葱干用手揉匀,基础发酵至2-2.5倍大,

  1. 发酵好的面团取出排气,分割成6份,滚圆后松弛15分钟。

  1. 然后对折捏紧。

  1. 将面团搓成一头大一头小的形状,松弛5分钟。

  1. 面团大头朝上、小头朝下摆放,用擀面杖从面团中间位置朝上下两个方向分别擀开,上部中间切一个口子。

  1. 分开刀口,将面片向下折起。

  1. 自上而下卷起,底部粘好

  1. 依次做好其余5份面团,放入烤盘,每个面团表面用刀竖着划开一个刀口。

  1. 最后发酵30分钟,表面刷一层全蛋液,割口处放一小条黄油,放入预热好的烤箱中层,上下火180度,18分钟。

小贴士

注意:洋葱不需要烤得非常干,只要体积明显缩小且外皮干燥就可以了,里面湿润一些没关系的,这样就能保证将洋葱揉进面团时面团不至于太湿粘。
