别以为喝热水是什么千年传统。 唐朝日本和尚圆仁在山东逛了一圈，笔记里写的是“百姓终年吃冷食”。 宋朝汴梁夜市提瓶卖茶的摊子热闹到三更天，可一捆柴烧开的水，够穷人吃三天饭。 北宋开封煤价200文买15斤，而30文就能买一斗米吃十天。 陶罐煮水更费柴，底层百姓连热菜都吃不上，哪舍得专门烧水喝？

欧洲人当年比我们还魔幻。 14世纪伦敦孕妇被医生要求喝葡萄酒安胎，理由是“酿酒的水煮过”。 1854年霍乱暴发时，啤酒厂工人靠顿顿喝酒躲过一劫他们不知道，煮沸杀菌才是关键。 这场灾难催生了伦敦自来水厂，而上海直到1926年还因水厂消毒失败，导致三千人感染霍乱。

保温瓶才是真正的国民功臣。 1952年全国产量855万只，到1987年飙到2亿只，相当于每6人就有1只。 印着大红牡丹的铁壳暖瓶，是七十年代结婚三大件之一，江西某县甚至要凭结婚证才能购买。 工厂后勤科长要是没供足开水，第二天就能被工人投票罢免；劳模领奖时最风光的，是捧着印有“先进工作者”的保温杯；小学生偷喝生水会被记入卫生黑名单，比考试作弊还丢人。

老虎灶的烟火气泡开了半部市井史。 上海弄堂的灶台藏着大智慧：前灶小铁罐猛火三分钟就开，后灶大锅靠余温保温。 老江湖都懂“吃讲茶”两家闹矛盾不去官府，到老虎灶摆桌请街坊评理。 1947年《申报》登过，米店老板少给半斤米，被拉去老虎灶公审，最后赔了米还请20桌茶客。 天津“保和轩”水铺更绝，自带100座说书场，茶客花一分钱买热水能听三小时《三国》，掌柜靠茶钱就能付艺人工资。

2013年上海最后的老虎灶关门时，78岁的周阿婆看着拎保温瓶的老邻居抹眼泪。 67年间，灶台从烧柴升级成燃气锅炉，终究敌不过家家户户的电热水壶。 如今石库门的老墙根下，还有老人坐在小板凳上讲古：生煎摊的油香混着修鞋匠的胶水味，算命先生端着热水杯给人看手相，蒸汽里飘着半个世纪的吴侬软语。

保温杯里泡枸杞的年轻人未必知道，他们随手拧开的杯盖里，蒸腾着1952年显微镜下的恐慌，飘着老虎灶前排队打水的晨雾，还沉着一部被战火和细菌逼出来的生存史诗。
