这道菜呢,叫做广式焖羊肉。它跟北方的炖羊腩、涮羊肉完全是不一样的做法。
准备食材:带皮的羊腿肉一斤半左右,香芋一小条,洋葱半个,青红椒各一个。调料:蚝油两勺,生抽两勺,白糖一小勺,料酒两大勺,胡椒粉一小勺,孜然粉一小勺,孜然粒一小把,盐适量,姜片、蒜瓣若干。
首先将羊肉切块备用。然后锅中烧水,加入几片生姜,水开后倒入羊肉焯水一分钟,捞出控干水分备用。
接着起锅热油,放入生姜片、大蒜瓣炒出香味,再把羊肉倒进去翻炒均匀,让每一块羊肉都裹上一层油脂。紧接着往里面加一罐啤酒没过羊肉,盖上锅盖焖煮十分钟。
10 分钟后打开锅盖,把洋葱块、香芋条放进去,继续盖上锅盖焖煮 5 分钟。期间可以尝一下汤汁的味道,如果不够咸的话就加点盐调味。
接下来往锅里淋入两大勺料酒去腥增香,再依次加入生抽、蚝油提鲜,最后撒入一小勺白糖增色提味。翻拌均匀以后盖上锅盖,再次焖煮 5 分钟。
