深秋初冬，正是内蒙羔羊肉上市最好的时节。|淮山药|羊排|美味菜肴|胡萝卜|花椒|调料|青蒜|黄酒

草原的羔羊，鲜香肥美，奶香十足，没有腥膻味。家里的小兄妹到了贴秋膘的时候，胃口大开，红烧羔羊排是他们俩近期的最爱。羊排里加入了胡萝卜和淮山药，胡萝卜清润，淮山药补脾肺肾，正适合秋燥。

黄酒（焯水用）

花椒

葱姜蒜片

适量

冰糖

5克

黄酒（炖肉用）

50毫升

生抽

15毫升

淮山药

红烧内蒙羔羊排的做法步骤

步骤 1

备料：羊排斩成小块，葱姜蒜切片，胡萝卜和淮山药切滚刀块。

步骤 2

焯水：取一只铁锅，水开后放入羊排，适量黄酒，煮约3分钟，羊排捞出，洗净血沫，沥干待用。

步骤 3

小火煸香调料油：热锅冷油，放入花椒粒，小火煸香后迅速将花椒粒捞出；接着用剩下的花椒油煸香葱姜蒜。注意：花椒一定要小火快捞，否则花椒糊掉了会很苦。另外，羔羊排自带肥油，锅中用来煸香调料的色拉油尽可能少放。

步骤 4

煸香羊排：转大火，倒入焯过水的羊排，迅速翻炒，翻炒到如图所示表面微焦，放盐和糖，继续翻炒均匀。

步骤 5

依次加入生抽和黄酒：滋啦一声，黄酒下锅后立马激荡出羊排的香气。

步骤 6

加入烧开的热水：热水量稍稍没过羊排即可。注意：必须是开水，凉水下锅会影响羊肉口感，一定要保持热热的镬镬锅气！
