每次家里没胃口，我第一个想到的硬菜就是川味辣子鸡。满满一大盘香喷喷的辣子鸡刚端上桌，热气裹着浓烈香味直接往鼻子里钻，光是闻着就让人忍不住咽口水。趁热夹起一块送进嘴里，咔嚓一口酥到掉渣，醇厚的鸡肉鲜香味混着干辣椒的焦香，还有花椒绵长柔和的麻感，多重滋味一下子铺满整个嘴巴，吃完浑身都舒坦，整个人的精气神都提上来不少。这种越嚼越香的满足感，真的很难用言语形容，这就是川菜独有的魅力，吃过一次就再也忘不掉。

不管是日常自家吃饭，还是亲友上门待客，摆上一盘辣子鸡绝对撑场面。很多朋友在家复刻总踩坑，鸡肉要么发软不酥脆，要么味道寡淡不入味，今天把全套家常步骤分享出来，食材简单，流程不复杂，厨房新手也能一次成功。

食材准备

半只鸡、花椒、干辣椒、香葱、食盐、鸡精、料酒、菜籽油、生姜、大蒜、少许白糖、淀粉

详细制作步骤

1、鸡肉清洗干净，切成三厘米左右大小均匀的鸡块，放进大碗里，加食盐、料酒，再舀少许淀粉，上手充分抓拌均匀，静置腌制十分钟。淀粉能牢牢锁住鸡肉汁水，炸出来外皮酥脆，内里肉质鲜嫩，腌制这一步也能让肉底提前入味。

2、处理配菜，干辣椒剪成小段，生姜、大蒜切薄片，香葱切段全部放一旁备用。

3、锅中多倒一些菜籽油，油温烧热后下入腌好的鸡块，全程中火慢炸，炸到鸡块表皮收紧、变成深金黄色，捞出沥干多余油脂放一边。

4、锅里留适量底油，烧至七成热，先下姜片、蒜片小火煸炒，爆出浓郁蒜香姜香，接着倒入干辣椒段和花椒，慢慢翻炒出麻辣香气。

5、把炸好的鸡块倒回锅中，大火快速翻拌均匀，撒上少许鸡精、一点点白糖提鲜，持续翻炒让每块鸡肉都裹上香料味道。最后丢入香葱段，快速翻两下就能直接出锅装盘。

红彤彤的干辣椒衬着金黄酥脆的鸡块，翠绿葱段点缀提色增鲜，端上桌颜值直接拉满。夹一块入口，外皮酥脆，内里肉香浓郁，麻辣滋味恰到好处，一口下去满满的味蕾满足感，香得停不下筷子。这道菜妥妥的下饭神器，麻辣鲜香超开胃，每次做都得多蒸两碗米饭，就连剩下的辣椒花椒拌米饭都格外好吃。

实用小贴士

1、干辣椒和花椒是整道菜的灵魂，麻度辣度可以根据自己的口味酌情增减，爱吃重口的可以多放一些。

2、腌制鸡块的时候盐一定要一次性放够，鸡肉炸完表皮收紧，后续再放盐只能浮在表面，很难渗进肉里，吃着会内里无味。

3、炸鸡肉的油温一定要烧得足够热，低温油炸不仅耗时久，鸡块外皮还软塌不酥脆，高温下锅才能快速定型，炸出焦脆口感。
