回锅肉可以说是川菜里家喻户晓的经典菜品，也是很多人家餐桌上常备的家常菜。做得地道的回锅肉真的格外诱人，夹起一块肉片搭配脆嫩蒜苗送入口中，蒜苗独有的清爽清香萦绕舌尖，带着淡淡的酱香微辣，肥瘦相间的肉质软糯顺口，完全不会腻口。一口接一口根本停不下来，配上一碗热气腾腾的白米饭，越吃越解馋，满满的满足感，谁吃谁喜欢。

不少朋友在家复刻总踩坑，肉片油腻发柴、卷不起好看的灯盏窝，蒜苗炒软失去脆感。其实不用大厨手艺，抓牢几个简单关键点，普通人在家也能轻松做出饭店同款味道，步骤简单易懂，零失败好上手。

食材准备

二刀肉（夹缝肉 / 五花肉）、蒜苗、红油郫县豆瓣酱、味极鲜酱油、甜面酱、食盐、鸡精、花椒、大葱、生姜、干辣椒段、白糖、菜籽油

详细制作步骤

1、整块二刀肉冲洗干净沥干，冷水下锅，加水完全没过肉块，放入拍碎的生姜、葱段、少许花椒，大火烧开炖煮。煮至筷子能轻松扎进肉里、戳开无血水渗出就关火，捞出肉块放至不烫手，切成薄厚均匀的肉片备用。

2、处理配菜，蒜苗摘掉老根、发黄的顶端，撕掉外层老皮，清洗干净后斜刀切段；郫县豆瓣酱细细剁碎，更容易炒出红亮红油。

3、锅中倒入菜籽油，油温烧至四成热，下入干辣椒段快速翻炒，激发出干辣香气。接着倒入切好的猪肉片，不停翻炒，炒到肉片边缘微微卷曲，形成地道的灯盏窝形态后盛出备用。

4、炒锅中放入菜籽油烧热，放入剁碎的郫县豆瓣酱，持续翻炒，慢慢炒出鲜亮红油，酱香味完全释放。随后加少许食盐、一勺甜面酱、一点点白糖中和味道，放入肉片翻炒均匀入味，淋上一小勺味极鲜酱油提鲜上色。

5、最后下入蒜苗、少许鸡精，开大火快速翻炒，蒜苗断生立刻关火，不用久炒，保留脆嫩口感，一盘地道家常回锅肉就完成了。

刚出锅的回锅肉装盘看着就食欲满满，油润红亮的肉片卷成好看的灯盏窝，翠绿蒜苗点缀其间，酱香混合肉香、蒜香扑面而来。肥瘦相间的肉片入口软糯，油脂经过煸炒清爽不腻，酱香柔和微辣，蒜苗脆嫩解油，中和了肉的厚重感。

这道菜最绝的搭配就是白米饭，浓郁的酱汁裹住米粒，肉片咸香入味，简简单单就能多干两碗饭，好吃又解馋。

实用小贴士

1、煮肉火候把控到位，筷子轻松扎透、无血水渗出刚刚好，煮太久肉质发柴，后续炒制口感变差。

2、优先选用二刀肉、五花肉，肥瘦比例均衡，炒出来更香润；日常也可以替换蒜苔、莴笋片、土豆片当配菜，换着花样吃不重样。
