三伏天没胃口？这道家常干煸四季豆超下饭，十几分钟搞定

一到三伏大热天，真的特别怕下厨！天气闷热油腻重口吃不下，清淡素菜又觉得没味道，每到饭点都不知道该做什么菜。

我家三伏天最常做的就是这道干煸四季豆，真的百吃不腻！菜市场随手就能买到新鲜四季豆，搭配一点肉末，食材简单又家常。不用复杂调料，不用长时间炖煮，十几分钟就能端上桌。

做好的干煸四季豆真的太开胃了！豆角表皮微微起皱、油润入味，每一根都牢牢裹满浓郁肉香，鲜香味十足。荤素搭配刚刚好，不油腻、不寡淡，一口豆角一口米饭，越嚼越香、越吃越解馋，妥妥的夏日下饭神器，全家老少都爱吃。

食材准备

新鲜四季豆、肥瘦相间梅花肉、小米辣（若不喜欢吃辣可以替换红甜椒）、生姜、小葱、蒜末、生抽、少许白糖、食盐、鸡精、植物油

详细制作步骤

小米辣切成小段，小葱切葱花，生姜、大蒜全部切末备用。四季豆摘掉两端，撕干净侧边老硬筋络，掰成长段，多清洗几遍，彻底沥干水分，避免下锅溅油。

梅花肉剁成细腻肉末，肥瘦相间的肉末炒出来更香润不柴，味道比纯瘦肉好吃很多。

锅中多倒一点植物油，油温烧热后下入四季豆，中小火慢煎慢炸，煎到四季豆表皮起皱、微微起皮，呈现虎皮状态就可以捞出，沥干多余油脂备用。

锅留少许底油，下入姜末、蒜末、葱花，小火慢慢爆出香味，再放入小米辣段炒出微辣香气。

倒入调好的肉末，快速翻炒至完全变色、炒出肉香油脂。接着倒入炸好的四季豆，大火翻炒均匀。

加入少许食盐、一点点白糖提鲜、少许鸡精，淋少量生抽调味。开中小火慢慢煸炒入味，中途分两到三次淋入少许清水，让豆角充分吃透料汁，最后开大火收干汤汁，即可出锅装盘。

满满一盘干煸四季豆端上桌，色泽鲜亮诱人，看着就让人食欲大开。煸过的四季豆口感软糯又带一点韧劲，表皮油润不干柴，每一根都吸足了肉末的鲜香和调料的滋味。

微微的辣度特别开胃，不呛口不油腻，荤素搭配口感层次超丰富。三伏天燥热不想吃饭的时候，就靠这道菜拯救胃口，配上一碗热气腾腾的白米饭，大口扒饭太过瘾，简单家常却无比治愈！
