【食材准备（2-3人份）】

主料：三黄鸡半只（或鸡腿4个）、土豆2个、干香菇8-10朵（鲜香菇也可）

辅料：生姜3片、大蒜5瓣、小葱2根、干辣椒2个（不吃辣可省略）

调味：生抽2勺、老抽1勺、料酒1勺、蚝油1勺、白糖少许、食盐适量、食用油少许

小贴士：新手优先选鸡腿肉，肉质更嫩、油脂适中，比整鸡更好把控口感，不容易炖柴。干香菇的香味比鲜香菇更浓郁，提前泡发后味道更正宗，泡香菇的水过滤后可以留用焖煮，增香翻倍。

【详细做法步骤】

第一步：食材预处理，干净无腥味

鸡肉切成大小均匀的块，放入清水中浸泡10分钟，泡出多余血水，减少腥味。冷水下锅，加入姜片、一勺料酒，大火煮沸焯水，撇干净表面的浮沫，煮2分钟后捞出鸡肉，用温水冲洗干净沥干备用。切记不要用冷水冲热鸡肉，避免肉质收紧变柴。土豆去皮切成滚刀块，放入清水中浸泡，防止氧化变黑；香菇泡发后切十字花刀，泡菇水过滤掉杂质留存备用；葱姜蒜切好备用。

第二步：简单煸炒，激发香味

锅中放少许食用油，油热后下入葱姜蒜、干辣椒爆香，倒入沥干水分的鸡块，中小火慢慢煸炒。炒至鸡块表面微微焦黄，逼出鸡肉多余的油脂，这样吃起来不油腻，香味更足。接着加入生抽、老抽、蚝油、少许白糖，快速翻炒均匀，让每一块鸡肉都均匀裹上酱汁，上色均匀诱人。

第三步：焖煮入味，软糯鲜香

鸡肉上色后，放入香菇翻炒1分钟，激发出香菇的独有鲜味，随后倒入没过食材的温水，也可以倒入适量泡香菇的原水，大火烧开后转小火盖上锅盖焖煮15分钟。小火慢焖能让鸡肉充分吸收酱汁和香菇的香味，肉质变得软烂入味。

第四步：加入土豆，收汁出锅

十五分钟后打开锅盖，放入土豆块，根据自己的口味加入适量食盐调味，轻轻翻炒均匀，继续盖上锅盖焖煮8-10分钟。土豆极易煮熟，最后放可以避免煮烂融化，保持完整的块状，口感粉糯不碎。最后开大火收浓汤汁，待汤汁变得浓稠裹满食材，撒上一把葱花即可关火出锅。

1. 全程不用复杂调味，依靠食材本身的鲜味搭配基础调料，味道就足够浓郁，新手不用纠结调料配比。

2. 焖煮一定要用小火，大火容易煮干汤汁、煮老鸡肉，小火慢焖是肉质鲜嫩的关键。
