干煸肥肠

食材：猪大肠500克、洋葱1个、柿子椒1个、葱2根、姜1小块、老抽1汤匙、生抽2汤匙、白酒2茶匙、蒜5克、八角2个、桂皮1段、香叶2片、白糖1茶匙、食盐2茶匙、干辣椒1把

做法:

1、肥肠入锅，加老抽、生抽、水、少许白酒、葱姜蒜、八角、桂皮、香叶、1茶匙盐、白糖，卤煮40-60分钟;

2、卤过的肥肠用一根筷子能戳进去就差不多了，捞出;

3、卤好的肥肠切块，放入锅中，不加油小火干煸;

4、煸至肥肠表皮微卷发黄，并且出油，盛出待用，锅中留底油，放入洋葱块翻炒;

5、翻炒至洋葱变软，将洋葱移到锅边，放入葱姜蒜、干辣椒段炒香

香粽烧排骨

材料：猪中排250克，香粽12个（约250克），姜片10克，整干椒15克。植物油40克，盐5克，味精4克，鸡精2克，蚝油4克，料酒20克，八角，桂皮各4克，白蔻2克，香油5克，鲜汤300克，糖色适量。

做法：

1、将猪中排剁成2.5厘米长的段，入沸水锅内焯水，捞出沥干水分。

2、锅入植物油烧至五成热，下姜片煸香，再下入猪排炒干水分，放八角、桂皮、整干椒、白蔻，烹入料酒炒香，然后倒入鲜汤，旺火烧开后撇去浮沫，加入盐、味精、鸡精、蚝油、糖色调好颜色与味道，转小火烧至排骨软烂。

3、烧好后选出香料，加入蒸熟的香粽，旺火收浓汤汁，淋香油，出锅装盘即成。

豉汁蒸排骨

食材：大排400克、豆豉15克、蒜5克、姜5克、料酒1汤匙、食盐1/2茶匙、生抽1汤匙、白糖1茶匙、蚝油1汤匙、胡椒粉1/2茶匙、生粉1/2汤匙、植物油1汤匙。

做法：

1.猪肋排斩小块，冲洗至无血水后用清水浸泡15分钟左右，捞出沥干水分。

2.干豆豉剁碎，姜蒜切末放进小碗里，加料酒、盐、生抽、蚝油、白糖和胡椒粉调匀做成豆豉汁。

3.把调好的豆豉汁倒进排骨里，拌匀，淋1汤匙食用油拌匀

4.加生粉拌匀，入开水锅，大火蒸15分钟左右至排骨熟烂即可。

春笋炒腊肉

做法1.准备食材:腊肉150g，春笋250g

2.准备配料:油适量、姜适量、葱适量

3.先将腊肉洗干净，放入锅内煮五分钟左右，去掉咸味捞出切片，春笋去壳切片。

4.锅内倒入油烧热，放入姜、腊肉，煸炒腊肉至透明。

5.放入春笋翻炒均匀。

6.加入半杯水煮至汁稠，加入葱花即可出锅。

鲜虾烧板栗

鲜虾500g，板栗200g，洋葱1/2个，蒜薹200g，姜1块，盐1茶匙，蚝油1汤匙，鸡精1/2茶匙，豆豉酱 50g

步骤：

1.板栗煮熟，洋葱切丁，蒜薹切丁备用。

2.锅里放油，放入豆豉酱和姜片煸炒出香味。

3.倒入虾翻炒均匀。

4.放入板栗，蚝油，盐，少许开水大火炒到虾八成熟。

5.放入蒜薹洋葱翻炒均匀，调入鸡精即可

香辣炸茄片

材料：茄子500克，炸粉140克，五香粉1克，油、盐适量，干辣椒粉5克

做法：1、茄子洗干净、切片，清水浸泡5分钟。

2、捞出浸泡的茄片，撒上适量的盐拌匀。

3、140克的炸粉，加入适量的清水拌均，无硬块即可。

4、五香粉、干辣椒粉放入面糊中拌均，放入茄子片，均匀裹上面糊。

5、热锅倒油，待油温升到180度左右放入裹好面糊的茄片，炸2～3分钟左右，翻转另外一面继续炸到金黄即可。

椒盐鸡翅

准备食材：鸡中翅，盐，料酒，生抽，玉米淀粉，蒜末，葱花，辣椒，芝麻，椒盐，辣椒面

下面我们来介绍下椒盐鸡翅的做法步骤：

第一步：新鲜的鸡中翅清洗干净，如下图改切花刀。

第二步：加盐，料酒，生抽，抓均匀腌制半个小时。

第三步：腌制好的鸡中翅表面均匀的拍上一层玉米淀粉。

第四步：处理好的鸡中翅六层油温下锅炸，

炸至金黄熟透捞出控油。

第五步：锅内烧热油，下蒜末，小米辣炒香。

加芝麻，椒盐，辣椒面

第六步：下入鸡中翅，翻拌均匀

出锅的时候撒上葱花，椒盐鸡翅就做好了。

番茄松鼠鱼

材料：草鱼；料酒、淀粉；大蒜；番茄酱、白糖

做法：1、鱼去鳞、鳃、内脏，用清水洗净

2、以胸腹鳍处下刀，将鱼头切下，然后再从下颌处下刀，将鱼头劈半刀，用刀

番茄松鼠鱼；略拍，剔下两面鱼肉，除净胸部细刺

3、鱼尾相连，在鱼肉面剂上宽麦穗花刀，连同鱼头用绍酒。精盐腌渍入味

4、葱头、冬菇、玉兰片、胡萝卜均切成丁，放入沸水中氽过

5、炒锅内放入花生油，用中火烧至七八成热时，分别将鱼头、鱼肉沾匀精面粉，在鸡蛋黄液中拖过，做成松鼠形炸至金黄色；捞出装入鱼盘中

6、炒锅内留少量油，番茄酱下锅略炒，加葱头丁、冬菇丁、玉兰片丁、胡萝卜丁、青豆略炒，加绍酒、清汤、精盐、白糖、醋烧开，用湿淀粉勾成流芡，加入芝麻油，浇在鱼上即成。

山药排骨汤

材料：山药、木耳、排骨、葱、姜、枸杞、盐、水

做法：1.山药去皮切滚刀块，木耳泡发撕成小朵，排骨切段。

2.排骨放入沸水中焯水，煮3分钟后捞出。

3.把排骨、山药、木耳、葱、姜放入压力锅中，加适量水煮45分钟。

4.煮好的排骨汤加入盐调味，撒上枸杞和葱花即可。

皮蛋瘦肉粥

材料：大米1碗、松花蛋1个、瘦猪肉2两、盐一勺、清水500ml

做法：

1.将淘好的米放入电饭锅，加入水，水和米的比例为2:1

2.将电饭锅调制到蒸饭档

3.待水开始粘稠，呈现粥状，加入切成丁的皮蛋

4.10分钟后，将用淀粉和料酒腌制好的瘦肉丝以及盐放入锅内

5.待电饭锅跳至保温档即可

荸荠南瓜小米粥

主料：荸荠、南瓜、小米、糯米

厨具：电饭煲

做法：1）把糯米和小米洗净放入电饭锅加入适量的清水。

2）然后按下煮粥键。

3）把荸荠和南瓜去皮切块。

4）煮至米快熟的时候，加入荸荠、南瓜，加盖继续煮。

5）直到粥稠米烂即好喝的时候也可加入一些白糖，即可。

白灼菜心

食材：菜心、大蒜、葱花、酱油

1、菜心洗净、切去头部待用

2、烧开水，将菜心下锅焯熟

3、待菜心焯水至断青，在锅里加适量的油

4、然后捞起装盘

5、起油锅，拍碎蒜头，葱切成葱花，下锅过一下油，然后加入酱油调成调料，淋在菜心上面就行了、装盘

酱香肉末茄子

材料：茄子300g、肉末100g、油适量、盐适量、豆瓣酱1大勺、料酒适量、淀粉适量、洋葱适量

1.准备好所用食材。

2.洋葱切成碎备用。

3.茄子洗净切成条，加入少量的盐抓匀腌制10分钟。

4.腌制好的茄子条挤去水分，加入淀粉拌均。让茄子都能够均匀沾满干淀粉。

5.锅中注油，烧热下入茄子条。

6.炸至金黄，捞出沥油。

7.锅中留底油下入肉末煸炒至变色。

8.加入洋葱碎煸炒出香味。

9.加入豆瓣酱。

10.烹入料酒。小火煸炒均匀。

11.倒入炸好的茄子条。加入一点水。

12.烧制汤汁收干即可。

食材：紫薯300克、糯米粉50克、牛奶30克、白芝麻、白糖30克。

做法：1、紫薯洗净，削皮，大火蒸熟，压成泥状，放入白糖，加入糯米粉，再倒入牛奶，揉匀。

2、将紫薯泥团成一个个小圆球，滚动烤盘，使紫薯球均匀地蘸上芝麻，依次将紫薯球压成紫薯饼。

3、用饼铛或者平底锅放少许油，小火煎熟即可。
