第一道：韭菜炒核桃仁

1. 韭菜择去老叶和根部，用清水反复冲洗干净，沥干水分后切成约4厘米长的段，韭菜白和韭菜叶分开放置备用。

5. 锅中留底油，放入姜丝和蒜片爆香，先下韭菜白部分大火翻炒约30秒，再下韭菜叶继续翻炒。
6. 韭菜变软后，倒入炒好的核桃仁和泡软的枸杞，快速翻炒均匀，淋入1勺生抽提鲜。
7. 加入适量食盐调味，大火翻炒10秒即可关火出锅，全程保持大火快炒，避免韭菜出水变塌。

所需食材： 羊肉500克、生姜50克、红枣8颗、当归5克、枸杞10克、料酒2勺、食盐适量、白胡椒粉少许、清水适量。
步骤：
1. 羊肉切成3厘米左右的块，放入清水中浸泡1小时，中途换水2次，充分泡出血水，减少膻味。
2. 锅中加冷水，放入羊肉块，加入1勺料酒和几片生姜，大火煮开后撇去浮沫，焯水3分钟捞出。
3. 焯好的羊肉用温水冲洗干净，沥干水分；生姜洗净切片，红枣去核，当归和枸杞分别洗净备用。
4. 砂锅中加入足量清水，放入羊肉块、姜片、红枣和当归，大火煮开后转小火慢炖。
5. 炖煮约1小时后，用筷子戳一下羊肉，能轻松穿透即可，此时汤色变白，香气浓郁。
6. 加入枸杞和适量食盐调味，再撒少许白胡椒粉提鲜去腥，继续炖煮5分钟让味道融合。
7. 关火后焖3分钟再盛出，撒上少许葱花或香菜点缀即可上桌，趁热喝汤吃肉效果最好。

步骤：
1. 茴香择去老梗和黄叶，用清水洗净后沥干，切成约2厘米长的碎段，茴香梗和叶分开放置。
2. 鸡蛋打入碗中，加少许食盐和几滴香油，用筷子充分搅打均匀，打至蛋液表面起细密泡沫。
3. 大蒜去皮拍碎，切成蒜末备用，蒜末可稍微多一点，能更好地激发茴香的香气。

步骤：
1. 土鸡剁成块，放入清水中浸泡30分钟去除血水，中途换水一次，捞出沥干备用。
2. 锅中加冷水，放入鸡块、2片生姜和1勺料酒，大火煮开后撇净浮沫，焯水2分钟捞出。
3. 焯好的鸡块用温水冲洗干净，沥干水分；山药去皮切成滚刀块，泡在清水中防止氧化变黑。
