The Winter Solstice is the day of the year with the longest night and the shortest day. On this day, customs differ between the north and the south. In northern China, most families celebrate with dumplings. People believe that eating dumplings shaped like little ingots can protect their ears from the bitter cold, and light a small, warm lantern of reunion in the long winter night.
In a narrow alley in Zhengzhou, steam curls up from the bamboo steamers of a time-honored dumpling shop, as a century of craftsmanship quietly flows through the artisans' fingertips.

As the steam rises, the dumpling skins turn translucent and lustrous, like the quiet stirrings of warmth deep within the earth. When the lid is lifted, white mist carries the fragrance of time itself. This is no longer just a basket of food. In every tiny pleat of the dumpling, there is a hidden promise that spring will return.
