喜欢吃卤味的，平时经常自己在家里做的话，总是少不了一锅老汤。像我家经常就会卤些牛腱子，鸡腿，豆腐干，猪蹄，鸡蛋什么的，冰箱里的那坛老汤经过长时间的卤煮已经非常浓稠，放凉后像果冻一样浓稠，因为煮过太多的牛腱肉，连我自己都记不清了。
每个月总会开那么几次老坛取出老汤卤制一些牛腱子，猪蹄，什么的，当下酒的凉菜，或则煮个牛肉面时放几片卤牛肉上去，吃的也是相当的幸福满足，相对于外边切的像纸一样的牛肉来说，真的是太解馋了。
虽然也是我网上学来的方法，试验了那么多次感觉真的很不错，先不管它够不够正宗，好吃才是硬道理，所以分享给大家，有兴趣的可以看看。简单介绍一下关于老卤的原料：八角、桂皮、花椒、香叶、草果这几样是必不可少的，绝对不能没有。陈皮解腻，如果没有哪怕是放2片橘子皮也是好的。
甘草和罗汉果可以增加卤汁的甜味，如果有放这2样，冰糖可以少放一点，不然太甜也是不好。丁香和小茴香都有增香的作用，山奈可以去腥等等，大家酌情选择。我之前的老汤用的是（桂皮，草果，八角，香叶，花椒，陈皮，甘草，白芷，罗汉果，丁香，小茴香，干辣椒，生姜，香葱，生抽，老抽，料酒，冰糖，盐。）煮过后肉的汤过滤，放冰箱冷冻保存，下次可以添加点香料继续用。
原料：
牛腱子两斤、鸡蛋六个、（最后又加了几片豆腐干）老汤（前些边有介绍）、桂皮，八角，香叶，草果等。
1、两斤牛腱子备用，卤制的话最好就是用牛腱肉。（我这次还一起卤了几个鸡蛋，后来又加了几片豆腐干。）
2、九阳珐琅锅内加入适量的水，放入洗净的鸡蛋。
3、鸡蛋煮熟后去壳，然后用小刀在表面画几个小口，方便入味。
4、九阳珐琅锅内再次加入适量的水，牛腱肉冷水下锅煮，水开后煮几分钟，稍微翻动，去除血水。
5、捞出后，清洗干净备用。
6、老汤拿出来化冻，放入九阳珐琅锅煮开。适当的加一些新的香料进去。
7、下入处理好的牛腱肉，小火焖煮。
8、稍微晚点下入处理好的鸡蛋。（我又加了几片豆腐干。）
9、肉煮到用筷子可以插入即可，不用煮煌太烂。煮好的肉可以不用着急出锅，放在锅里浸泡入味。（牛肉冷却后放冰箱冷藏1个小时以上再切，能切得更薄。我这次着急吃，没有冷藏。可以搭配个人喜欢的蘸料一起食用。）
小贴士：
1、香料不能放太多，放太多了，卤汁会发苦，尤其是重新使用老卤时，每次根据卤量的多少，适当补充就好，原则是宜少不宜多噢。
2、剩下来的卤汁，过滤，再煮开，用保鲜盒装好，冷却后盖好盖子，如果一周之内还要用，就放冷藏室保鲜即可，但如果长时间不用，要放冷冻室保存，每过一个月到三个月左右要拿出来解冻、煮沸、装盒、冷却、再放入冷冻。下次卤的时候，提前拿出来化开，再适当添加凉水或者肉汤汁和各类调料。
3、牛肉不能卤得太酥烂，太酥烂肉质就柴了，没有什么嚼劲也没啥口感。也不能卤得太硬，太硬了，嚼不烂。
4、卤好的食物可以不用着急取出，放在锅里浸泡一下，更入味。
5、牛肉冷却后放冰箱冷藏1个小时以上再切，能切得更薄。我这次就是着急拍图，直接拿出来切了，所以这么厚，这么丑。
