大家好，我是美食胡先生，今天要给大家分享的同样是一道水煮鱼，但是跟大家平常时候吃的水煮鱼有很大的不一样，因为今天我给大家分享的是一道水煮鱼块，相对于鱼片，我觉得鱼块更具挑战性，同时对烹饪的要求也会更高，比如处理鱼的腥味，怎么煮才又嫩又入味？

水煮鱼大家都不陌生，但是水煮鱼块同样能给你不一样的味觉体验，相比鱼片，我感觉鱼块更多了一些韵味，这只有真正体验过的人才知道，下面就给大家展示它的具体制作方法！

1.食材准备，今天我们用的是两斤左右的鲤鱼，鲤鱼很多人做不好，那是你没有掌握这些方法，不信你继续往下看，鱼酸菜一袋，生姜大蒜头适量，小葱两根！

2.宰杀好的鱼清洗干净，砍成大小均匀的块，然后放入漏勺再次冲洗干净，控干水分，放入碗中码味去腥，加适量盐，胡椒粉，少许鸡精味精，啤酒适量，用手充分抓拌均匀，然后再加少许红薯淀粉再次抓匀腌制十分钟左右！

3.所需食材全部清洗干净，酸菜也要清洗哦，然后把小葱的葱白部分切成段，葱叶切成小葱花，生姜大蒜头剁成颗粒，酸菜改刀切成小段！

4.开始制作，首先起锅烧油，油热以后倒入干花椒和鲜花椒适量，然后倒入姜蒜末爆香，接着加适量红油豆瓣酱增香提色，适量火锅底料炒香炒出红油，倒入酸菜继续翻炒，炒出酸菜的乳酸味！

5.这时我们加适量啤酒，然后再加适量清水，倒入葱段，调味加适量十三香，胡椒粉和生抽，鸡精味精，少许白糖，煮开一两分钟熬出调料的香味！
