老话说“夏至一阴生”,这天儿越热,咱们身体里的阳气反而越容易往外跑、往 dissipation。再加上贪凉喝冷饮、吹空调,脾胃也容易受寒。所以这时候,聪明的吃法不是一味“吃苦”降火,而是要学会温补阳气、养护脾胃。
我给大家整理了8道我家伏天常做的“扶阳菜”,食材常见,做法不复杂,关键是吃完浑身暖洋洋、特得劲儿,帮您把亏空的阳气补回来,脾胃舒服了,整个夏天都精神头十足!
第一道:辣椒香菇炒肉——唤醒沉睡的味蕾与阳气
这道菜是我家的“米饭杀手”,微辣咸香,香菇的鲜和青椒的脆爽交织,肉片滑嫩,吃一口就停不下筷子。
食材:猪瘦肉300克、鲜香菇200克、青辣椒3根、干辣椒几个、姜蒜适量。
1. 腌肉有诀窍:瘦肉切薄片,加少许盐、1勺生抽、1勺料酒抓匀,再放1勺玉米淀粉锁住水分,最后淋半勺食用油防粘,腌制10分钟。这样处理的肉片怎么炒都嫩。
2. 备菜:香菇去蒂切片,青椒滚刀切块,干辣椒剪段,姜蒜切末备用。
3. 滑炒肉片:热锅凉油,油温六成热时下肉片,大火快速滑炒至变色立刻盛出(这一步要快,防止肉变老)。
4. 炒香配菜:锅留底油,爆香姜蒜干辣椒,先下香菇片中火煸炒,直到香菇变软、微微出汤,这时候香味就出来了。再下青椒块翻炒几下。
5. 合味出锅:倒入炒好的肉片,加1勺生抽、1勺蚝油、少许盐调味,大火快炒让所有食材味道融合,出锅前撒点鸡精提鲜即可。
第二道:花生猪蹄汤——满满的胶原蛋白,给身体“加油”
这道汤我每周必炖一次,猪蹄软糯脱骨,花生绵香,汤头浓郁奶白,喝下去从胃里暖到脚底,特别适合体虚、手脚冰凉的朋友。
食材:猪蹄2只、红皮花生小半碗、姜片、盐。
做法:
1. 处理猪蹄:猪蹄斩块,冷水下锅,加姜片和料酒焯水,水开后煮3分钟,撇净浮沫,捞出用温水洗净(千万别用冷水冲,否则肉容易紧实)。
2. 炖煮:将猪蹄、红皮花生、几片姜放入砂锅,一次性加足热水(水量要没过食材再多一些)。
3. 火候是关键:大火烧开转最小火,慢炖1.5~2小时。中途尽量不要开盖,最后20分钟再放盐调味,这样肉更烂、汤更鲜。
第三道:凉拌莴苣木耳——清脆爽口,给脾胃“减负”
天热没胃口?来一盘这个,酸辣脆爽,比吃肉还过瘾,关键是能帮身体清理垃圾,让阳气生发更顺畅。
食材:干木耳一把、莴笋半根、胡萝卜半根、蒜末、小米辣。
1. 焯水有先后:木耳提前泡发洗净,下开水锅焯熟捞出过凉。莴笋和胡萝卜去皮切菱形片,水开后下锅,焯烫20秒立刻捞出过凉(时间长了就不脆了)。
2. 灵魂料汁:大碗中放入所有食材,加蒜末、小米辣圈、2勺生抽、1勺陈醋、少许盐和白糖、几滴香油和麻油,再来一勺辣椒油。
3. 抓匀开吃:戴上手套充分抓拌均匀,让每片食材都裹上料汁,放冰箱冷藏10分钟风味更佳。
第四道:香菇炒小白菜——蔬菜也能鲜掉眉
这道菜看似简单,但要做得好吃,顺序和火候是精髓。小白菜脆嫩,香菇的鲜味完全融入其中,清淡却不寡淡。
食材:小白菜1把、鲜香菇几个、大蒜3瓣。
1. 分档处理:小白菜洗净,菜帮和菜叶分开,菜帮用刀斜切成片(增加接触面更入味),菜叶切大段。香菇切片,大蒜切末。
2. 焯水锁色:锅中水开,加几滴油和一小勺盐(让菜更翠绿),先下菜帮烫30秒,再下菜叶烫10秒,捞出立刻过凉水,沥干备用。
3. 大火快炒:热锅凉油,爆香蒜末,下香菇片中大火炒软炒香。接着倒入焯好的小白菜,加1勺生抽、半勺蚝油、少许白糖提鲜,开最大火快速翻炒均匀,立刻出锅。
第五道:茄汁鱼片——酸甜开胃,嫩滑如豆腐
这道菜特别受老人和孩子喜欢,番茄汤汁浓郁,鱼片白嫩无刺,入口即化。自己做,比饭店的还实惠。
食材:黑鱼或草鱼片(约300克)、番茄3个、番茄酱2勺、姜葱、白醋、白糖。
1. 鱼片上浆(关键):鱼片洗净挤干,加料酒、白胡椒粉抓匀去腥。再放入一个蛋清,朝一个方向搅打直到蛋清完全被吸收、鱼片发粘。最后撒入1勺玉米淀粉抓匀,封一层油腌制10分钟。这是鱼片嫩滑不碎的秘诀。
2. 熬制红汤:番茄去皮切小丁。锅中热油爆香姜葱,倒入番茄丁,用铲子边炒边按压,炒成浓稠的番茄泥。加入2大勺番茄酱炒出红油,倒入足量开水。
3. 低温氽烫:汤烧开后加白糖、白醋、盐调成喜欢的酸甜口。转小火,让汤面保持微沸但不翻滚,一片片下入鱼片。全部下完后转中火,煮约40秒,看到鱼片变白卷曲即可。
4. 温柔盛出:连汤带鱼片轻轻倒入碗中,不要用力搅动。撒点葱花或白芝麻,红亮诱人。
第六道:干锅手撕包菜——镬气十足,比肉还香
包菜用手撕,断面不规则,更能吸附汤汁。配上五花肉煸出的猪油香,麻辣脆爽,绝对是下饭神器。

食材:包菜半棵、干辣椒6个、蒜3瓣、五花肉50克。
1. 关键两步:包菜一定要手撕成大片,去掉硬梗,洗净后彻底沥干水分(这是不出水的关键)。五花肉切薄片。

第七道:夜来香牛肉丸汤——一口鲜掉眉毛的夏日特饮
夜来香是夏天独有的时令菜,自带清雅香气,配上Q弹的牛肉丸,汤鲜味美,喝完全身通透舒畅。
食材:潮汕牛肉丸3-4个、夜来香150克、猪油少许、盐、鸡精。
1. 处理食材:夜来香摘去老梗,洗净。牛肉丸切成厚片(或十字花刀)。
2. 先煎后煮:锅中放一小块猪油化开,下牛肉丸片,中火煎到表面微焦起泡,这样能激发出牛肉的脂香。
3. 快手汤:立即倒入适量开水,大火煮2分钟让汤变白。放入夜来香,盖盖大火煮2分钟,最后加盐和少许鸡精调味即可。香气扑鼻,趁热喝。
第八道:香辣排骨——越啃越上瘾,补阳又解馋
排骨这样做,不加一滴水,用啤酒代替,肉质软烂脱骨,香辣入味,啃起来特别过瘾。
食材:排骨500克、小米辣、姜蒜、蒜苗(大蒜叶)、啤酒一罐。
1. 煎香排骨:排骨洗净沥干,热锅凉油,油热后撒少许盐(防粘),下排骨块,中小火煎至两面金黄微焦(约5分钟),把排骨里的油逼出来。
2. 爆香佐料:放入小米辣圈、姜片、蒜片炒出香味,淋入1勺酱油翻炒上色。
3. 啤酒焖煮:倒入一罐啤酒(没过排骨即可),加入青红椒块和蒜苗梗,盖上盖子,中小火焖煮10分钟。
4. 大火收汁:开盖,加半勺盐、1勺生抽、1勺蚝油调味,转大火收浓汤汁,最后撒入蒜苗叶,翻炒两下即可出锅。
